THAI MARINADE [STEAK, PORK, CHICKEN OR FISH]
Steps:
- Blend everything in food processor. Use to marinate meat [8 hours or overnight], chicken [4-6 hours], or fish [1-2 hours]. I simply combine the sauce and the meat in a large ziplock bag and put it in the refrigerator for the alloted time. Then it's good to go on the grill. Heat the marinade and serve it on the side. The sauce will taste a little different every time, just because the chilies can be so unpredictable.

Steps:
- Preheat oven to 400.

THAI BARBECUE MARINADE
Good on chicken or pork. Not recommend for fish or seafood, as the long marinating time will "cook" the fish and make it tough. Because of the sugar and honey in this, it will burn easily if not watched on the grill (thanks for that info, diner :) ). If you can't find rice wine, use sherry, but not rice vinegar.

BEEF STEAK IN THAI MARINADE
Steps:
- Trim fat from meat. Place meat in a plastic bag set in a shallow dish. For marinade, in a blender container or food processor bowl combine coconut milk, lemongrass or lemon peel, lime juice, fish sauce or soy sauce, red curry paste, and sugar; cover and blend or process till smooth. Pour marinade over meat. Close bag; refrigerate for 4 to 24 hours, turning bag occasionally. Drain steaks, reserving marinade. Grill the steak on the grill rack of an uncovered grill directly over medium-hot coals for 12 to 15 minutes or to desired doneness and turning once and brushing once with reserved marinade halfway through. Discard any marinade. Remove steak from grill; let stand for 5 minutes. Thinly slice meat across the grain. Pot-luck tip: Keep the meat soaking in the marinade as you transport it on ice. Then grill the meat just before everyone gathers to eat. Remember to pack a long-handled brush (to brush on the marinade as the meat cooks), long-handled tongs, and a sharp knife.
Tips:
- Choose the Right Cut of Meat: Select a cut of meat that will hold up well to marinating and grilling. Flank steak, skirt steak, and chicken breasts are all good options.
- Use a Quality Marinade: The marinade is what gives the meat its flavor, so be sure to use a marinade that you enjoy. Experiment with different recipes until you find one that you love.
- Marinate the Meat for at Least 30 Minutes: The longer you marinate the meat, the more flavor it will absorb. However, don't marinate the meat for too long, or it will become tough.
- Bring the Meat to Room Temperature Before Grilling: This will help the meat cook evenly.
- Grill the Meat Over Medium-High Heat: This will help to sear the outside of the meat and keep it juicy on the inside.
- Rest the Meat Before Serving: This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.
Conclusion:
Thai marinade is a flavorful and easy way to add some excitement to your next grilled meal. With just a few simple ingredients, you can create a marinade that will tenderize and flavor your meat to perfection. So next time you're firing up the grill, be sure to try one of these Thai marinade recipes.
