Number Of Ingredients 15

2 squids
1/2 yellow bell pepper, sliced and chilled
1/2 red bell pepper, sliced and chilled
1 sweet white onion, sliced
3 pickled garlic bulbs, sliced
3 Thai chilies, chopped
1/3 cup of pac peow, chopped
1/3 cup of cilantro, chopped
2 green onions, chopped
1 tablespoon of palm sugar
1 tablespoon of toasted rice powder
2 tablespoons of fish sauce
2 tablespoons of lime juice
2 tablespoons of reserved pickled garlic juice
2 tablespoon of roasted peanuts, crushed

Steps:

  • Prepare the bell peppers and onions by slicing thinly. Add the bell peppers to an ice cold water bath while preparing other ingredients.
  • Slice the pickled garlic cloves and set aside. Reserve 2 tablespoons of the pickled garlic juice that was part of the jar.
  • Chop up the chilies, pac peow, cilantro, and green onions. Set aside.
  • Score both squids by making narrow slices through the squid lengthways, careful not to cut all the way through. Turn the squid and score again to make small diamond shapes. This will allow the strips to curl up with a beautiful presentation.
  • Cut the scored squid into bite size pieces, about 1 inch in length.
  • Next, you'll want to blanch the squid. Put the squid in a heat safe bowl. Bring a pot of water to a boil. Ladle in the hot water from the pot to the heat safe bowl, and allow the squid to be blanched for about 30 seconds. Drain the squid, and repeat this process 2-3 times until the squid is cooked through. This method allows you to not overcook the squid. Overcooking the squid will turn it rubbery.
  • Once the squid is cooked, add in the palm sugar, toasted rice powder, fish sauce, reserved pickled garlic juice, and lime juice. Stir it up.
  • Add in the drained bell peppers, onion, and the rest of the herbs along with the crushed peanuts.
  • For presentation, you can place the salad on a dish and surround with lots of green vegetables and herbs, adding the Thai chiles on top for a beautiful presentation of the dish.

PLA GOONG (SPICY THAI SHRIMP SALAD)

Pla Goong (Spicy Thai Shrimp Salad) image

This dish is somewhere between a shrimp salad and a ceviche - just-cooked shrimp dressed with a sour-savory-sweet mixture of lime, fish sauce, and sweet chile paste, then showered with herbs and chiles. In classic Thai fashion, it's combination of many tastes, each moment on your palate different from the next. It's a favorite of Pornpong Kanittanon, the Consul General of Thailand in New York, and the recipe is adapted from his wife, Jaisamarn.

Yield 2 to 4 servings

Number Of Ingredients 13

Salt (optional)
3 ounces lime juice (from about 3 limes)
3 tablespoons fish sauce
1 1/2 tablespoons sugar
2 tablespoons nam prik pao (Thai chile paste in oil)
2 finely chopped Thai bird chiles, or to taste
1 pound large shrimp (1 1/2 pounds if heads-on)
2/3 cup very thinly sliced lemongrass (see note)
1 large shallot, thinly sliced
1/2 cup roughly chopped cilantro
1/2 cup whole mint leaves
6 makrut lime leaves, finely shredded
Jasmine rice, for serving

Steps:

  • Bring a pot of 3 quarts of water to a boil. (I like to salt the water like pasta water; Kanittanon does not add salt.)
  • In a large bowl, combine the lime juice, fish sauce, sugar, nam prik pao and chopped chiles. Taste, and adjust with any of the ingredients, including salt. The sauce's flavor should be led by sourness and savoriness, but with a good balance of sweetness and heat.
  • Cook the shrimp in the water until it just turns opaque, medium or medium-rare, about 1 minute. For better flavor, cook the shrimp with heads or shells on; peel when just cooled enough to handle.
  • Add the shrimp to the sauce while still warm and toss; the lime will continue to "cook" the shrimp like a ceviche. Add the lemongrass, shallot, cilantro, mint leaves and makrut lime leaves, reserving a little of each herb for garnish. Toss, and place on a dish; scatter the reserved herbs on top. Serve immediately with hot rice.

Tips:

  • Use fresh squid: Fresh squid has a more tender texture and a milder flavor than frozen squid.
  • Clean the squid properly: Be sure to remove the ink sac, the beak, and the eyes from the squid before cooking.
  • Blanch the squid briefly: Blanching the squid for a few seconds in boiling water will help to tenderize it and prevent it from becoming tough.
  • Use a variety of vegetables: This salad is a great way to use up leftover vegetables. Some good options include tomatoes, cucumbers, onions, and bell peppers.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Serve the salad immediately: This salad is best served immediately after it is made. The squid will toughen up if it is left to sit for too long.

Conclusion:

Thai spicy squid salad is a delicious and refreshing dish that is perfect for a summer meal. It is made with fresh squid, vegetables, and a spicy dressing. This salad is easy to make and can be tailored to your own taste preferences. If you like spicy food, you can add more chili peppers to the dressing. If you prefer a milder salad, you can reduce the amount of chili peppers. This salad is also a good source of protein and vitamins.
