1 teaspoon balsamic vinegar
1 teaspoon lemon juice
½ teaspoon dried rosemary
½ teaspoon dried oregano
8 large mushrooms, quartered
1 large zucchini, quartered
1 large green bell pepper, cut into pieces
1 large red onion, cut into pieces

Steps:

  • Preheat an outdoor grill for high heat.
  • Stir olive oil, balsamic vinegar, lemon juice, rosemary, and oregano together in a bowl.
  • Place mushrooms, zucchini, bell pepper, and onion in a deep grill-safe pan and brush with the oil mixture.
  • Place the pan on the preheated grill and cook until tender, turning once, 10 to 15 minutes.

6 ounces uncooked thick rice noodles
2 tablespoons packed brown sugar
3 tablespoons reduced-sodium soy sauce
4 teaspoons rice vinegar
2 teaspoons lime juice
2 teaspoons olive oil
3 medium carrots, shredded
1 medium sweet red pepper, cut into thin strips
4 green onions, chopped
3 garlic cloves, minced
4 large eggs, lightly beaten
2 cups bean sprouts
1/3 cup chopped fresh cilantro
Chopped peanuts, optional
Lime wedges

Steps:

  • Prepare noodles according to package directions. Drain; rinse well and drain again. In a small bowl, mix together brown sugar, soy sauce, vinegar and lime juice., In a large nonstick skillet, heat oil over medium-high heat; stir-fry carrots and pepper until crisp-tender, 3-4 minutes. Add green onions and garlic; cook and stir 2 minutes. Remove from pan., Reduce heat to medium. Pour eggs into same pan; cook and stir until no liquid egg remains. Stir in carrot mixture, noodles and sauce mixture; heat through. Add bean sprouts; toss to combine. Top with cilantro and, if desired, peanuts. Serve with lime wedges.

Kids will eat their veg! - you will need a "grill wok" Available at Home Stores (I have two for large groups) The ingredients are flexible - Use any vegetables that you would normally grill - zucchini, eggplant, onions, peppers, mushrooms, asparagus, green beans. Cut the pieces fairly large - 3/4" or so.

1 red bell pepper
1 onion
3 zucchini
2 tablespoons sesame oil
2 tablespoons soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon hot red pepper flakes (optional)

Steps:

  • Cut pepper into 1" cubes, Cut onion in half and then quarter and separate the layers. Slice zucchini into 1/2" thick discs. Place in a mixing bowl and ddd the rest of the ingredients - toss to coat. Allow to marinate for 30 minutes to 6 hours.
  • Preheat grill and set gas to low heat (somewhat indirect heat on charcoal)- heat grill wok and add vegetables. Toss briefly and let cook for 2 - 4 minutes before checking for browning. Continue to toss every few minutes until carmelized and fabulous.

1 medium zucchini, cut lengthwise in half
1 medium summer squash, cut lengthwise in half
1/4 cup reduced-sodium vegetable broth or 1/4 cup reduced-sodium chicken broth
1 tablespoon lime juice
1/2 teaspoon chopped of fresh mint
1/2 teaspoon chopped fresh basil
1/2 teaspoon finely chopped gingerroot
1/2 teaspoon finely chopped jalapeno
1 teaspoon reduced sodium soy sauce

Steps:

  • Place zucchini and squash in square baking dish 8 × 8 × 2 inches. Mix remaining ingredients; pour over vegetables. Cover and let stand at least 1 hour but no longer than 2 hours.
  • Heat coals or gas grill. Remove vegetables from marinade; reserve marinade. Cover and grill vegetables 4 inches from medium heat 10 to 15 minutes, turning and brushing 2 or 3 times with marinade, until golden brown and tender.
  • Cut each crosswise into 4 pieces. Toss with any remaining marinade.
