My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

3 Eggs Slightly Beaten
1/2 Teaspoon Salt
1/4 Teaspoon Ground Nutmeg
1 1/2 Cup Seasoned Croutons, Slightly Crushed.

Steps:

  • Preheat oven to 325
  • Thaw broccoli and let it drain in a colander.
  • Melt butter in a frying pan over medium heat.
  • Add onions and stir until bubbly.
  • Pour in milk and add flour to make a roux, by cooking until mixture boils and thickens.
  • Add the cheese and stir into the mixture until melted.
  • Remove from heat and add the broccoli, eggs, salt, nutmeg and pepper.
  • Pour into a slightly greased 2 qt casserole dish.
  • Sprinkle with croutons. Bake at 325 for 30 minutes

2 cups cream of chicken soup
1 tablespoon butter, softened
2 pounds processed cheese food (such as Velveeta ®), sliced
2 sleeves buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir the broccoli florets, cream of chicken soup, and 1 tablespoon softened butter together in a 9x13-baking dish until the broccoli is coated with the soup. Pack lightly to form a flat surface. Layer about half the slices of processed cheese food atop the broccoli mixture.

3 to 4 large heads broccoli (about 3 1/2 pounds), trimmed of long stalks and cut into small florets

4 1/2 cups whole milk

6 -8 yellow onions, chopped
4 lbs frozen broccoli cuts
16 ounces cream cheese
1 1/2 cups unsalted butter
1/2 cup flour
3 cups milk
1 loaf stale bread, crust removed, cut into small bite sized pieces
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic powder
2 cups parmesan cheese

Steps:

  • Boil onions until semi-soft. Steam broccoli enough to dethaw, but don't cook all the way. Melt 1 ½ sticks of butter in large sauce pan. Sprinkle flour into pan and cook on medium heat, add cream cheese, salt, pepper and garlic powder and cook until bubbly. Whisk in milk and cook until thick. Mix sauce, broccoli and onions together in large bowl. Pour into 2 casserole dishes (casseroles can be refrigerated overnight, if necessary.).
  • Bake at 350 degrees for 30 minutes. Mix bread crumbs, 1 ½ sticks of melted butter and Parmesan cheese together in separate bowl and spread over casserole. Bake another 15 minutes.
