1 pound ground turkey
1 tablespoon carrots (, finely grated)
1 tablespoon onion (, finely grated)
1 teaspoon celery seed
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
½ cup seasoned bread crumbs (, divided)
1 egg (, lightly beaten)
2 tablespoons olive oil (, divided)
½ cup mayonnaise
2 teaspoons fresh sage (, minced)
2 teaspoons fresh thyme (, minced)
2 teaspoon fresh rosemary (, minced)
¼ teaspoon fine sea salt
½ cup Cranberry Sauce
4 large brioche rolls
1 cup leafy greens

Steps:

  • In a small skillet, heat 1 tablespoon olive oil with carrots and onion over medium heat. Cook until reduced in size and opaque.
  • In a large mixing bowl, combine ground turkey with grated carrots, onion, celery seed, 1 tablespoon seasoned bread crumbs, garlic powder, black pepper and lightly beaten egg. Incorporate ingredients, but do not over mix.
  • Form into 4 equal size burger patties.
  • Place remaining bread crumbs onto a plate or other shallow dish. Dredge each patty to cover it in bread crumbs.
  • Heat tablespoon olive oil over medium high heat in a skillet.
  • Working in batches, cook 2 of the turkey burgers, about 4 on each side, or until internal temperature reaches 165 degrees.
  • Cook next batch with last 1 tablespoon olive oil. You can do them together as long as you have a large enough skillet.
  • In a small bowl, combine all ingredients for herbed mayonnaise. This includes mayo, sage, thyme, rosemary and fine sea salt.
  • On each roll, place a small amount of leafy greens, followed by a cooked turkey burger patty, then herbed mayo and cranberry sauce.

3 pounds ground turkey breast
1 (6 ounce) package chicken-flavored dry bread stuffing mix

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.

1 small sweet potato (6 to 8 ounces)
1 tablespoon butter
1/3 cup finely chopped yellow onion (about 1/2 a small onion)
1/4 cup finely chopped celery (about 1 small stalk)
2 teaspoons finely chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme leaves
1 teaspoon freshly minced garlic (about 1 medium clove)
1 pound ground turkey thighs or 85% lean pre-packaged ground turkey
1/3 pound loose pork breakfast or sage sausage
Kosher salt and freshly ground black pepper
4 soft potato rolls such as Martin's

  • Using the tines of a fork, poke holes in potato all over. Place potato on a plate and microwave on high until a paring knife can be inserted in middle of potato with no resistance, 9 to 12 minutes, checking and flipping the potato every 3 minutes. Grill burgers over direct heat until an instant read thermometer reads at least 145°F in the center of burger, but no more than 165°F.

Steps:

  • In a large bowl, combine the turkey, panko, mayonnaise, Worcestershire sauce, salt, and pepper, and mix with your hands until just evenly incorporated.

1 medium onion, thinly sliced
1/2 cup grape tomatoes, halved
1 large garlic clove, thinly sliced
4 tablespoons extra virgin olive oil, divided
salt & freshly ground black pepper
1/2 lb ground turkey
2 tablespoons dry white wine or 2 tablespoons dry red wine
1 -2 ounce extra-sharp cheddar cheese, cut into 1/4- to 1/2-inch cubes (optional)
2 large whole grain buns

  • Put 2 tablespoons of the olive oil in a 10-inch nonstick skillet and heat over high. Add onions and tomatoes with generous sprinkles of salt and pepper. Sauté over high, stirring frequently, until onions begin to brown.
