- In a small skillet, heat 1 tablespoon olive oil with carrots and onion over medium heat. Cook until reduced in size and opaque.
- In a large mixing bowl, combine ground turkey with grated carrots, onion, celery seed, 1 tablespoon seasoned bread crumbs, garlic powder, black pepper and lightly beaten egg. Incorporate ingredients, but do not over mix.
- Form into 4 equal size burger patties.
- Place remaining bread crumbs onto a plate or other shallow dish. Dredge each patty to cover it in bread crumbs.
- Heat tablespoon olive oil over medium high heat in a skillet.
- Working in batches, cook 2 of the turkey burgers, about 4 on each side, or until internal temperature reaches 165 degrees.
- Cook next batch with last 1 tablespoon olive oil. You can do them together as long as you have a large enough skillet.
- In a small bowl, combine all ingredients for herbed mayonnaise. This includes mayo, sage, thyme, rosemary and fine sea salt.
- On each roll, place a small amount of leafy greens, followed by a cooked turkey burger patty, then herbed mayo and cranberry sauce.

- Heat the butter in a skillet over medium-low heat, and cook and stir the onion and celery until the onion is soft and translucent, about 5 minutes.

- Using the tines of a fork, poke holes in potato all over. Place potato on a plate and microwave on high until a paring knife can be inserted in middle of potato with no resistance, 9 to 12 minutes, checking and flipping the potato every 3 minutes. Alternatively, place potato in 425°F oven and cook until a paring knife can be inserted in middle of potato with no resistance, about 1 hour. Split potato open and allow to cool slightly, 5 to 10 minutes. Using a spoon, scoop out flesh in a small bowl, discard skin.
- Melt butter in a small skillet over medium heat. When foaming subsides, add onion and celery and cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in sage, thyme, and garlic and cook until fragrant, about 30 seconds. Remove from heat and let cool for 5 to 10 minutes.
- Place turkey, sausage, 1/4 cup sweet potato flesh, and vegetable mixture in a medium bowl and mix with hands until incorporated. Form mixture into 4 patties. Season with salt and pepper to taste.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill burgers over direct heat until an instant read thermometer reads at least 145°F in the center of burger, but no more than 165°F.

- Put 2 tablespoons of the olive oil in a 10-inch nonstick skillet and heat over high. Add onions and tomatoes with generous sprinkles of salt and pepper. Sauté over high, stirring frequently, until onions begin to brown.
- Add garlic and cook until onions are wilted and soft. Remove from heat. Set aside half the onion mixture for topping burgers.
- Blend ground turkey with remaining onion mixture, 1/4 teaspoon salt and 1/8 teaspoon pepper. Shape into 2 balls.
- Make a deep hole with your thumb and insert half of the cheese into each ball. Pinch hole closed and flatten ball into 3/4- to 1-inch thick patties with no sign of cheese on the outside. Patties will be very soft and sticky.
- Heat remaining 2 tablespoons olive oil in a 10-inch nonstick skillet over medium high. Sear burgers about 30 seconds on each side until browned.
- Lower heat to medium-low and cook about 5 minutes per side, or until there is no pink at center of burger and an instant-read thermometer measures at least 150 degrees
