Tips:
- Use a good quality chicken breast or thigh. Bone-in, skin-on chicken will give the dish more flavor, but boneless, skinless chicken is easier to work with.
- Pound the chicken breasts or thighs to an even thickness. This will help them cook evenly.
- Season the chicken with salt, pepper, and your favorite Italian herbs.
- Dredge the chicken in flour, then eggs, then breadcrumbs. Make sure the chicken is evenly coated.
- Shallow fry the chicken in olive oil until golden brown and cooked through. Alternatively, you can bake the chicken in a preheated oven at 400 degrees Fahrenheit for 20-25 minutes, or until cooked through.
- Top the chicken with marinara sauce and mozzarella cheese. Return to the oven and bake until the cheese is melted and bubbly.
- Serve the chicken parmesan with spaghetti, mashed potatoes, or your favorite side dish.
