THE CADILLAC OF MEATLOAF

The Cadillac of Meatloaf image

The yogurt is the secret ingredient in this meatloaf! You can use a mixture of ground beef, veal and pork if desired. To save time you can saute the mushroom/onion mixture a day in advance and refrigerate. Also chili sauce or ketchup can be spread on top of the meatloaf before baking. For Italian-style breadcrumbs see recipe#203857, if you are using this recipe for breadcrumbs reduce the Parmesan cheese to 1/4 cup and omit the thyme.

Tips:

  • Use high-quality ground beef.An 80/20 blend of chuck and sirloin is ideal.
  • Don't overmix the meatloaf mixture. Overmixing can result in a tough meatloaf.
  • Add plenty of flavorings to the meatloaf mixture. This could include things like bread crumbs, eggs, onions, garlic, herbs, and spices.
  • Shape the meatloaf mixture into a loaf shape and place it on a baking sheet. Top with a glaze or sauce, if desired.
  • Bake the meatloaf in a preheated oven at 350 degrees Fahrenheit for about 1 hour, or until a meat thermometer inserted into the center of the loaf reads 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving. This will help the juices redistribute and make the meatloaf easier to slice.
