THE ONE AND ONLY GARLIC SPAGHETTI

The One and Only Garlic Spaghetti image

Very bold. If you are not a garlic lover, don't try this recipe. This is an adaptation of Spaghetti a la Carbanora. The garlic and egg are both raw, but don't worry, the butter melts, the egg cooks ever so slightly, the cheese melts and an indescribably heavenly amalgamation takes place. Categories     Pasta

Yield 2 people

Number Of Ingredients 8

8 oz spaghetti
1 raw egg
5 to 8 cloves garlic, peeled and pressed - not less!
4 tablespoons butter
1/4 to 1/2 cup grated Parmesan cheese
1 teaspoon dried sweet basil
1/4 cup chopped parsley
fresh coarsely ground black pepper to taste - a lot!

Steps:

  • Cook spaghetti according to directions. While spaghetti is cooking, whirl everything but parsley and pepper together, until smooth and well blended. One can do this by hand, if the garlic is put through a press. When the spaghetti is cooked and drained, place it in a large bowl or pan and spoon over it the garlic - cheese paste. Add parsley, grind pepper over, toss well and serve at once.

Tips:

  • Choose the right pasta: Spaghetti is the classic choice for this dish, but you can also use other long pastas like linguine or fettuccine.
  • Use fresh garlic: Fresh garlic has a much stronger flavor than dried garlic, so it's worth the extra effort to mince it yourself.
  • Don't overcrowd the pan: When cooking the garlic, make sure to use a large enough pan so that the garlic doesn't overcrowd and steam instead of fry.
  • Cook the garlic slowly: Cooking the garlic slowly over low heat will help to bring out its flavor without burning it.
  • Use a good quality olive oil: The olive oil you use will make a big difference in the flavor of the dish, so choose a good quality extra virgin olive oil.
  • Add the pasta water: The starchy pasta water will help to create a creamy sauce.
  • Season to taste: Season the dish with salt and pepper to taste. You can also add other seasonings like red pepper flakes or grated Parmesan cheese.
  • Garnish with fresh herbs: Fresh herbs like parsley or basil will add a pop of color and flavor to the dish.

Conclusion:

Garlic spaghetti is a simple but delicious dish that can be made with just a few ingredients. By following these tips, you can make a garlic spaghetti that is sure to impress your friends and family.
