1 cup butter, softened
½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

VERY LEMON EXTRA TANGY LEMON BARS

Very Lemon Extra Tangy Lemon Bars image

I have created this recipe, using a variety of other recipes for a base and then changing many things to meet my intense lemon craving! These go together very quickly and they are very tangy, on the too-tangy side of wonderful almost. If you lovelovelove tangy lemon and want a nice crisp crust with a higher ratio of lemon to crust, please try this recipe and tell me what you think!

Time 50m

Yield 1 9x13 pan, 20 serving(s)

Number Of Ingredients 11

1/2 cup butter or 1/2 cup margarine
1/3 cup brown sugar or 1/3 cup Splenda brown sugar blend
1/4 cup sliced almonds
2 cups flour (no more!)
1/4 teaspoon salt
1 1/2-1 3/4 cups sugar
1/2 cup flour
1/2 teaspoon salt
6 eggs (large)
1 cup lemon juice
icing sugar, for dusting

Steps:

  • Preheat oven to 350°F.
  • Using a food processor, pulse cold margerine or butter, brown sugar, almonds, flour, and salt until it is blended together and has a sandy appearance.
  • Pat crust into a 9x13 pan (i give it a spray to keep everything from sticking and prefer to use a glass pan). It may seem very dry, but that is ok.
  • Bake crust for 20 minutes or until edges are just starting to turn golden.
  • Beat your eggs with a fork or whisk, then stir in lemon juice. In another bowl, mix flour, sugar, and salt. I use 1.5 cups sugar and they are very zingy. If you have any doubts, or know that you prefer slightly less zing, try 1.75 cups of sugar!
  • Remove crust from oven and reduce heat to 320°F This step is important!
  • mix wet ingredients into dry ingredients. Pour mixture on hot crust, and return to oven for 22 minutes, or until filling has set. It might still look a little wobbly in the center, but it will firm up a bit while it cools.
  • Cool, dust with icing sugar (You will need it if you used the lesser amount of sugar!).
  • Pucker up! :D.

THE BEST LEMON BARS

The Best Lemon Bars image

I got this recipe from my sister in law 20+ years ago, and since then have used it exclusively. These bars are not goopy, and have a perfect balance of sweet and tart. The crust is almost like a shortbread and is so delicate. During lemon season I make almost a pan a day and they disappear as quickly as I make them. You will not be disappointed. I use my food processor to do the work; you can use a traditional hand operated pastry blender for the crust and your blender for the filling

Time 40m

Yield 25 squares

Number Of Ingredients 9

1 cup flour
1/2 cup butter
3 -4 tablespoons powdered sugar
3 tablespoons lemon juice
2 teaspoons lemon zest (fresh)
2 eggs
3/4 cup sugar
2 tablespoons flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350. Locate an 8x8 baking dish.
  • Crust: Combine the 1 cup flour, butter, and powdered sugar in the food processor. Run until mixture resembles coarse meal.
  • Dump crust mixture into the pan. Distribute and press down by hand create the crust over the pan. You should create a firm, even layer of crust over the bottom of the pan, and a short edge (1/4-1/2 inch) of crust on the sides, which will help to contain the lemon filling later.
  • Bake for 10-12 minutes. Prepare filling while crust bakes.
  • Filling: Combine lemon juice, lemon zest, sugar, and eggs into the same food processor bowl (no need to wash between steps). Allow the processor to run the entire time the crust bakes. Upon removing crust, add the flour/baking powder mixture to the processor and mix another minute. Pour this over the top of the crust.
  • Place the pan back into the oven; decrease temperature to 325. Bake for 13-18 minutes. Top should appear white with golden overtones.
  • Remove from oven; cool for at least 15 minutes. Cut into squares. (I cut mine with a "Bash and Chop"- a great tool).

General Baking and Recipe Recommendations:

- Allowing the butter to soften before creaming it with sugar is essential for achieving a smooth and creamy texture. - Aim to have the butter and cream cheese at room temperature. This will enable them to mix easily and result in a smooth batter. - Chilling the pastry crust before adding the lemony mixture is key to preventing a runny or sloppy center. - Baking the crust before adding the lemony mixture results in a sturdier and more stable base for your bars. - Before adding the sugar to the eggs, make sure the sugar is dissolved in the mixture. This will help prevent a gritty texture in the finished bars. - Use fresh, unwaxed lemons when creating the lemony mixture. This will yield a more pronounced and zesty citrusy taste and aroma. - Incorporate cornstarch or arrowroot powder if you want a thick, syrupy texture for your lemony mixture. - Patience is important when making the lemony mixture. Stirring it too frequently could result in curdling. - The finished product should be slightly tangy and perfectly sweetened. Achieving a balance between these two flavors is essential. - Baking time might vary based on the dimensions of your pan and the peculiarities of your own stove setting. As such, take note of the color and don't overbake. - Creating a glass-like top on your bars can be achieved by utilizing a kitchen torch to caramelizing the sugar on top. - The chill factor is very essential in bringing about the perfect texture and taste of this dish, consider the indispensable step of chilling the mixture first before you bake. - Be sure to store the bars in an airtight container to ensure freshness and prevent drying out after preparation.
