2 lbs boneless skinless chicken breasts (chopped into chunks)
salt & pepper (to taste)
2 (10 ounce) packages frozen broccoli spears (thawed and drained)
1 (8 ounce) can sliced water chestnuts (drained & chopped)
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup reduced-fat mayonnaise
1 teaspoon lemon juice
1/2 cup milk
1/2 teaspoon curry powder, if desired
1/2 cup reduced-fat cheddar cheese (shredded)
1/2 cup dry breadcrumbs
1 (2 7/8 ounce) can French-fried onions
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in 12 inch skillet over medium-high heat.
  • Salt & Pepper (to taste) the chicken, cook in oil 5 to 6 minutes, stirring occasionally, until chicken is no longer pink in the center.
  • Layer broccoli spears, water chestnuts and chicken in ungreased rectangular baking dish, 13 x 9 inches.
  • Mix soup, mayonnaise, lemon juice, milk and curry powder; pour over chicken and broccoli.
  • Sprinkle with cheese, bread crumbs, onions and almonds.

2 cups cooked wide egg noodles
1½ cups frozen corn
1 cup shredded mild cheddar cheese
½ cup finely diced sweet yellow onion
6 strips cooked, crumbled bacon
1½ teaspoons kosher salt
1 teaspoon cracked black pepper
2 cups French fried onions

Steps:

  • Preheat the oven to 350*. Generously spray a 9x13 baking dish with nonstick cooking spray. Set it aside.

4 skinless, boneless chicken breasts
1 (8 ounce) can water chestnuts
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 cup cornflakes cereal crumbs
1 cup mayonnaise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
  • In a large bowl, combine the chicken pieces with the water chestnuts, onion, soup, most of the crushed corn flakes and mayonnaise. Mix well.
