Pork chops are known for their tender and flavorful taste, but when they're thick-cut, they can be challenging to cook perfectly. Overcook them, and they become tough and dry. Undercook them, and they could be unsafe to eat. The key is to find a method that will cook the chops evenly throughout without overcooking them. One excellent option is to braise them in a flavorful liquid, such as apple cider or chicken broth. This method helps keep the chops moist and juicy, while the spices and raisins add a delicious complexity of flavors.

APPLE-RAISIN PORK CHOPS
When I was growing up, we couldn't afford to have meat very often, so it was a special evening when we had these tender chops. The apples, raisins and apple cider give this dish a sweet touch and a pretty appearance. -Shirley Joan Helfenbein, Lapeer, Michigan

PORK CHOPS WITH APPLES AND RAISINS
This is a recipe from Tyler Florence which I have had good success with. It is pretty easy, you just need to plan a little ahead of time as this needs a couple of hours for the pork chops to soak in the brine. I like to serve this with wild rice.

- To ensure that the pork chops are cooked evenly, bring them to room temperature before cooking.
- Sear the pork chops in a hot skillet until they are browned on both sides. This will help to seal in the juices and prevent the chops from drying out.
- After searing the pork chops, reduce the heat to medium-low and cook them until they are cooked through. The internal temperature of the pork chops should reach 145 degrees Fahrenheit.
- While the pork chops are cooking, make the spiced apples and raisins. This can be done in a saucepan or in a slow cooker.
- Once the pork chops and the spiced apples are both cooked, serve them together. The spiced apples can be spooned over the pork chops or served on the side.
