THREE AMIGOS CHILI

Three Amigos Chili image

This is a recipe given to me from a friend, that came out of "The Abs Diet, Eat Right Every Time Guide." It is a "One-Pot Dish." And it says "Powerfoods: 5"...whatever that means. *shrug* I don't use the jalapeno tomatoes it calls for, since we don't like spicey. I just use regular tomatoes. Super easy and super yum!

"THREE AMIGOS CHILI"

This chili was a hit in the Test Kitchen. The mix of beans, meat, and veggies was great. The sweet peppers were a great addition. I can see why it's award-winning. It's a great shortcut chili recipe for a cool night. Serve with cornbread and the family will smile.

Time 1h5m

Number Of Ingredients 15

1 lb ground beef
1 lb steak, (choice meat, ex. rib eye, top sirloin, etc)
1 pkg "fully cooked" prepared "beef roast in au jus" (15 oz)
2 can(s) chili beans (16 oz each)
2 can(s) red kidney beans (16 oz each)
2 can(s) great northern (white) beans (16 oz each)
1 large jalapeño
1 choice of sweet pepper (red, orange, yellow)
1 can(s) sweet corn (16 oz)
2 can(s) tomato sauce (16 oz each)
1 can(s) tomato paste (6 oz)
1 packet "chili' seasoning
1 Tbsp Worcestershire sauce
1 tsp garlic powder
salt & pepper to taste

Steps:

  • 1. Add beans, corn, sauces, paste, and garlic to large pot and cook on medium heat.
  • 2. Brown ground beef, add 1/4 packet "chili" seasoning to meat. Pour the rest into pot and add meat to pot when done browning. (drain depending on how lean the meat)
  • 3. Grill steak (with dash of salt and pepper) to desired color, (medium usually chops best) chop and add to pot.
  • 4. Heat up "fully cooked" microwavable "beef in au jus" per package directions, shred with two forks and add to pot.
  • 5. Chop (or mince per preference) jalapeño and pepper and add to pot.
  • 6. Add garlic, salt and pepper (to taste) and cook on low for 30-45 min.

Tips:

  • Use a variety of beans. This will give your chili a more complex flavor and texture. Some good options include kidney beans, black beans, pinto beans, and Great Northern beans.
  • Don't skimp on the spices. Chili is a dish that is meant to be flavorful, so don't be afraid to use a generous amount of spices. Some essential spices for chili include chili powder, cumin, oregano, garlic powder, and onion powder.
  • Add some heat. If you like your chili spicy, add some diced jalapeños or cayenne pepper. You can also use a hot sauce or chili paste to taste.
  • Don't overcook the chili. Chili is a slow-cooked dish, but it's important not to overcook it. Overcooked chili will be tough and bland.
  • Let the chili rest before serving. This will allow the flavors to meld and develop. Chili is even better the next day, so if you can, make it a day ahead of time.

Conclusion:

Chili is a versatile and delicious dish that can be enjoyed by people of all ages. It's a great way to use up leftover meat and vegetables, and it's also a budget-friendly meal. With so many different recipes to choose from, there's sure to be a chili recipe that everyone will love. So next time you're looking for a hearty and satisfying meal, give chili a try!
