1/2 cup diced green bell pepper
1 tablespoon chili powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1 garlic clove, minced
1 cup garbanzo beans, rinsed and drained
1/2 cup black beans, rinsed and drained
1/2 cup pinto beans, rinsed and drained
8 ounces tomato sauce
12 taco shells
3/4 cup shredded iceberg lettuce
3/4 cup diced tomato
1/2 cup sharp cheddar cheese, shredded
1/2 cup salsa

Steps:

  • Heat oil in a large skillet over medium-high heat until hot.

1 large carrot, finely chopped
1 small white onion, finely chopped
Kosher salt and freshly ground black pepper
3 cloves garlic, minced
1 small jalapeno, seeded (optional), finely chopped
1 1/2 teaspoons ground cumin
Two 15.5-ounce cans pinto beans, drained and rinsed
1/4 cup fresh orange juice (about 1/2 large orange)
6 corn tortillas, warm
1/3 cup cilantro leaves and soft stems, roughly chopped
Hot sauce, for serving

Steps:

  • Heat a large saute pan over high heat. Add the oil and swirl the pan to coat. When the oil starts to shimmer, add the carrots and onions. Sprinkle liberally with salt and pepper and cook until tender and lightly browned in spots, stirring occasionally, about 8 minutes.
