Time 50m

Yield 8

Number Of Ingredients 13

½ (8 ounce) package baby carrots, or to taste
2 tablespoons butter
2 tablespoons all-purpose flour
2 ½ cups heavy cream
½ (8 ounce) package fontina cheese, shredded
1 (4 ounce) log goat cheese, broken into chunks
1 (16 ounce) package spaghetti
1 clove garlic, diced
2 tablespoons olive oil
4 bunches Swiss chard, stems removed
½ bunch baby arugula, or to taste
9 leaves fresh basil, divided
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place carrots in a large pot with lightly salted water to cover. Bring to a boil and cook carrots until fork-tender, 7 to 10 minutes. Drain.
  • Meanwhile, melt butter in a saucepan over medium heat. Add flour and mix well. Add heavy cream and bring to a simmer over medium heat. Cook and stir until a thick roux forms, about 10 minutes.
  • Mix fontina cheese and goat cheese into the roux. Cook until cheeses are completely melted and sauce is thickened, 3 to 5 minutes. Remove from heat.
  • Drain carrots and bring water back to a boil, pouring in more as needed. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Cook garlic with olive oil in another saucepan over medium heat until starting to brown, 1 to 2 minutes. Add Swiss chard, tearing them as they go into the pan. Cook until wilted, about 2 minutes. Add baby arugula and cook until wilted, about 1 minute. Chop 1 basil leaf into the pan using herb shears. Cook until wilted, about 30 seconds more. Mix in some of the cheese sauce if desired.
  • Drain pasta and divide over serving plates. Add carrots, chard, and arugula. Top with Parmesan cheese and more cheese sauce. Garnish each plate with a basil leaf.

BAKED PENNE WITH THREE CHEESES

Baked Penne with Three Cheeses image

I don't believe in serving kids macaroni and cheese every day. It should be treated as an indulgence, because that's what it is. This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese

1/2 cup dried breadcrumbs (preferably panko)

PASTA WITH THREE CHEESES BROWN

Pasta with Three Cheeses Brown image

Provided by Katie Brown

Categories     Milk/Cream     Pasta     Quick & Easy     Blue Cheese     Goat Cheese     Parmesan     Brandy     Winter     Gourmet     California

Yield Serves 4

Number Of Ingredients 10

3 cloves garlic, minced
1/2 teaspoon dried herbes de Provence or dried rosemary, crumbled
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1/4 cup brandy
1 cup heavy cream
3 ounces soft mild goat cheese such as Montrachet, crumbled (about 1/3 cup)
3 ounces Gorgonzola cheese, crumbled (about 3/4 cup)
1/2 cup freshly grated Parmesan cheese (about 2 ounces)
3/4 pound tricolored rotelle (corkscrew-shaped pasta) or other multicolored pasta

Steps:

  • In a large heavy skillet cook garlic and herbs in butter and oil over moderate heat, stirring, until garlic is softened but not browned. Remove skillet from heat. Add brandy and ignite, being careful as flames shoot up. Shake skillet gently until flames die out. Return skillet to moderate heat and stir in cream.
  • Add cheeses, 1 at a time, stirring until each cheese melts before adding the next. Cook sauce at a bare simmer until thickened slightly, about 8 minutes. Keep sauce warm.
  • In a kettle of boiling salted water cook pasta until al dente and reserve about 1/2 cup cooking water. Drain pasta well and in a bowl toss pasta with sauce and enough reserved cooking water to reach desired consistency.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the dish will taste. This is especially true for the cheese, so make sure to use a good quality Parmesan, cheddar, and mozzarella.
  • Cook the pasta al dente: This means that the pasta should be cooked until it is just tender, but still has a little bit of a bite to it. Overcooked pasta will be mushy and unpleasant to eat.
  • Don't overcrowd the pan: When cooking the pasta, make sure to use a large enough pot so that the pasta has plenty of room to move around. Overcrowding the pan will prevent the pasta from cooking evenly.
  • Season the pasta water: Adding a little bit of salt to the pasta water will help to flavor the pasta. You can also add other seasonings, such as garlic powder or Italian seasoning, to the water for extra flavor.
  • Use a variety of greens: This recipe calls for spinach and kale, but you can use any type of greens that you like. Some other good options include arugula, Swiss chard, and collard greens.
  • Don't overcook the greens: The greens should be cooked until they are just wilted, but still have a little bit of their crunch. Overcooked greens will be slimy and unpleasant to eat.
  • Serve the pasta immediately: This dish is best served immediately after it is made. The pasta will start to absorb the sauce and become mushy if it sits for too long.

Conclusion:

This three-cheese pasta with greens is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It is packed with flavor and nutrients, and it is sure to please everyone at the table. So next time you are looking for a quick and easy pasta recipe, give this one a try. You won't be disappointed.
