2 garlic cloves, minced
1 teaspoon fennel seed
1/2 teaspoon crushed red pepper flakes
1 bunch kale, trimmed and coarsely chopped (about 16 cups)
2/3 cup water
4 tilapia fillets (6 ounces each)
3/4 teaspoon pepper, divided
1/2 teaspoon garlic salt
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 teaspoon salt

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon oil over medium heat. Add garlic, fennel and pepper flakes; cook and stir 1 minute. Add kale and water; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until kale is tender., Meanwhile, sprinkle tilapia with 1/2 teaspoon pepper and garlic salt. In a large skillet, heat remaining oil over medium heat. Add tilapia; cook 3-4 minutes on each side or until fish just begins to flake easily with a fork., Add beans, salt and remaining pepper to kale; heat through, stirring occasionally. Serve with tilapia.

1/3 teaspoon peppercorns
1 clove
2 teaspoons sugar
3 tablespoons soy sauce
2 tablespoons white rum
1/2 teaspoon grated lemon rind
1 tablespoon lemon juice
1 teaspoon ground ginger
1 teaspoon garlic powder
1 pound whole tilapia, filleted
Salt and freshly ground black pepper
2 tablespoons olive or peanut oil
1 1/2 cups julienned mixed vegetables, such as carrots, zucchini, yellow squash, bell peppers

Steps:

  • In a dry skillet, toast the peppercorn and clove over medium heat until puffs of smoke begin to appear, about 1 minute. Transfer to a mortar and crush roughly.
  • In a small saucepan, simmer sugar, soy sauce, rum, lemon zest, and lemon juice over medium heat. Add the peppercorn/clove mixture, ginger, and garlic powder, and reduce by half.
  • Remove from heat, strain and let cool.
  • Place the fish fillets in the cooled marinade and let sit for 20 minutes.
  • Preheat the oven to 375 degrees F.
  • Heat a skillet on medium high heat. Remove the fish from the marinade. Season the fillet with salt and pepper. Place the marinade in a small saucepan, bring to a boil, and remove from the heat. paprika or chili powder
butter
limes or lemon
black pepper (Grounded, any preference)

  • Coat Tilapia Fillets in slight oil and grill till softly cooked. (5 minutes average).
  • Whilst Fish is cooking, heat some butter in a pan (enough to coat number of fillets throughly).
  • Add Chilli powder (as desired to taste) to the butter. Continue to stir well.
