1/2 cup whole roasted almonds
2 tablespoons tamari
1 1/2 pounds green beans, trimmed
2 tablespoons toasted sesame oil
3 tablespoons rice vinegar
2 cloves garlic, minced
2 teaspoons fresh ginger, peeled and finely chopped
1/2 cup fresh cilantro leaves, chopped roughly (optional)

Steps:

  • Place almonds in a small nonstick saute pan. Lightly toast over medium-high heat, about 3 minutes. Add 1 tablespoon tamari and stir until the almonds are coated evenly, about 30 seconds. Transfer to a plate and cool. Chop almonds roughly.
  • Prepare a large bowl of ice water. In a large pot of boiling salted water, cook beans until crisp-tender, about 8 to 10 minutes.
  • Drain the beans and transfer to the bowl of ice water. Remove green beans and drain well.
  • In a large bowl, combine the sesame oil, vinegar, garlic, ginger, and remaining 1 tablespoon of tamari. Add the drained green beans and toss to coat. Garnish with roasted almonds and fresh cilantro, if desired. Serve immediately, while warm.

2 cans (14.5-oz each) Del Monte® Cut Green Beans, drained
3 oz. slivered almonds
3 Tbsp. butter, divided use
1 Tbsp. Worcestershire sauce
11/2 tsp. lemon juice
1/4 tsp. ground cumin
1/8 tsp. salt or to taste
Black pepper to taste

Steps:

  • 1. Heat large skillet over medium-high heat. Add almonds, cook 2-3 minutes or until browned, stirring frequently, being careful not to burn. Add 2 Tbsp. of the butter, Worcestershire, lemon juice, and cumin. Cook until butter has melted, stirring constantly. Set aside on separate plate.
  • 2. Melt remaining butter over medium-high heat. Add beans, cook 2 minutes, stirring occasionally. Remove from heat, sprinkle almond mixture over all. Salt and pepper to taste.
  • Note: May toss and let stand for 5 minutes to absorb flavors.

The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

1/2-1 teaspoon Dijon mustard
2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil
1 1/2 cups sliced almonds, toasted
2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper
