1 medium onion, coarsely chopped
1 small fennel bulb, cored, coarsely chopped
1 carrot, coarsely chopped
1 celery stalk, coarsely chopped
2 tablespoons olive oil, plus more for serving
3 ounces pancetta, cut into 1/4" pieces
1 cup spelt
2 garlic cloves, chopped
Kosher salt, freshly ground pepper
1 tablespoon tomato paste
3/4 teaspoon crushed red pepper flakes
12 cups low-sodium chicken broth
1/2 head escarole, leaves torn into bite-size pieces
1 15-ounce can cannellini beans, rinsed
Shaved Parmesan (for serving)

Steps:

  • Pulse onion in a food processor until finely chopped. Transfer to a medium bowl. Repeat with fennel, carrot, and celery, placing vegetables in bowl with onion.
  • Heat 2 tablespoons oil in a large pot. Add pancetta and cook, stirring often, until golden brown, about 3 minutes. Add spelt and cook, stirring often, until grains are a couple of shades darker, about 3 minutes.
  • Add onion, fennel, carrot, celery, and garlic to pot; season with salt and pepper. Cook, stirring occasionally, until vegetables are softened, 6-8 minutes. Add tomato paste and red pepper flakes, and cook until paste is slightly darkened, about 1 minute.
  • Add broth to pot, bring to a boil, reduce heat, and simmer, partially covered, until spelt is tender, 60-70 minutes. Stir escarole and beans into soup and cook until escarole is wilted and beans are warmed though, about 4 minutes.
  • Serve soup drizzled with oil and topped with Parmesan.
  • DO AHEAD: Soup can be made 2 days ahead. Cover and chill.

1/4 cup olive oil, divided
1 onion, chopped
1 celery stalk, chopped
1 carrot, peeled and chopped

2 1/2 cups cooked cannellini beans, with a little of the liquid
4 cups chicken broth
1 head escarole or 5 cups baby spinach, chopped
Fennel pollen, optional garnish
Freshly grated Parmigiano-Reggiano cheese, optional garnish

Steps:

  • Heat a medium Dutch oven over medium-high heat. Add 2 tablespoons olive oil to the pan along with the onion, celery, carrot and garlic. Season with the salt and cook, stirring often for about 4 minutes, or until fragrant and soft. Add the red pepper flakes, if using, and cannellini beans and stir to combine.
  • Add the broth and bring to a simmer. Reduce the heat to medium to maintain a gentle simmer and cook for 5 minutes. Add the escarole and stir to wilt. Cook an additional 5 minutes. Serve topped with a drizzle of the remaining olive oil, fennel pollen and Parmigiano-Reggiano, if using.

1 tablespoon extra virgin olive oil
1 small yellow onion, chopped
4 garlic cloves, minced
2 (14 1/2 ounce) cans low-sodium low-fat vegetable broth
1 small carrot, diced
1 (14 1/2 ounce) can tomatoes with juice, diced
1/4 cup reduced-sodium ham, diced
3/4 cup angel hair pasta or 3/4 cup pastina
1/2 teaspoon crushed red pepper flakes (rub between fingers to waken flavor)
1/4 teaspoon fresh ground black pepper
1/2 cup water
1 (15 ounce) can white kidney beans, rinshed and drained
4 cups escarole, roughly chopped (Other choices ( dandelion greens, mustard greens or spinach)
1/2 cup grated parmesan cheese

Steps:

  • In a large dutch oven over a medium-high flame, heat the oil. Add the onion and garlic. Saute until the onions are soft and translucent, and the garlic begins to "dance".
