10 cups white bread cubes
1 (8 ounce) package lowfat cream cheese, softened
8 eggs
1 ½ cups milk
⅔ cup half-and-half cream
½ cup maple syrup
½ teaspoon vanilla extract
2 tablespoons confectioners' sugar

Steps:

  • Place bread cubes in a lightly greased 9x13 inch baking pan.
  • In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk, half and half, maple syrup, and vanilla until mixture is smooth. Pour cream cheese mixture over the bread; cover, and refrigerate overnight.
  • The next morning, remove souffle from refrigerator, and let stand at room temperature for 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake, uncovered, for 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Sprinkle with confectioners' sugar, and serve warm.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
8 ounces toblerone chocolate, dark chocolate or 8 ounces semisweet chocolate
1 ounce unsweetened chocolate, chopped
3 tablespoons honey
4 large eggs, separated
1/4 teaspoon salt
1 tablespoon sugar
sliced almonds
powdered sugar

Steps:

  • Butter six 1 1/4-cup soufflé dishes or custard cups. Sprinkle with sugar. Arrange dishes on large baking sheet.
  • Melt butter in heavy medium saucepan over medium heat. Add flour; whisk until mixture bubbles, about 2 minutes. Increase heat to medium-high. Gradually whisk in milk. Whisk until mixture boils, thickens and is smooth, about 1 minute. Remove from heat. Add 6 ounces Toblerone chocolate (scant 1 1/4 cups), unsweetened chocolate and honey; whisk until melted and smooth. Pour into large bowl. Cool to room temperature, stirring occasionally.
  • Preheat oven to 400°F Whisk yolks into chocolate mixture. Beat whites and salt in medium bowl until soft peaks form. Add 1 tablespoon sugar; beat until stiff and glossy. 2 pounds turnips, peeled and cubed
2 cups chicken stock
5 tablespoons butter, divided
½ cup fine bread crumbs
2 eggs, separated
1 ½ teaspoons brown sugar
1 teaspoon baking powder
¼ teaspoon salt, or to taste
⅛ teaspoon ground black pepper
⅛ teaspoon ground mace

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray into an 8x8-inch casserole dish with cooking spray.
  • Place turnips into a large pot and cover with chicken stock; bring to a boil. Reduce heat to medium-low and simmer until tender, about 25 minutes; drain. Transfer turnips to a bowl and mash with a potato masher or fork.

3 tablespoons unsalted butter, softened
2 tablespoons dry toasted bread crumbs
1 cup finely chopped celery
2 tablespoons flour
3/4 cup whole milk
Salt and freshly ground white pepper
3 large egg yolks
4 large egg whites
4 ounces Stilton, crumbled

Steps:

  • Make a foil collar for a 4-cup soufflé dish to extend an inch above the rim. Grease inside of dish and foil with 1 tablespoon butter. Dust with bread crumbs.
  • Preheat oven to 400 degrees. Melt the remaining butter in a medium saucepan over low heat. Sauté celery until tender but not brown. Stir in flour and cook for 1 minute.
