You can substitute other flavorings for the green tea. Suitable for vegans too! I approximated the amount of the green tea, but feel free to modify to taste. If you use sweetened soy milk, I suggest cutting back on the sugar.

GREEN TEA ICE CREAM

Time 1h50m

Yield 1 quart

Number Of Ingredients 6

2 cups heavy cream
2 cups half-and-half
1/2 vanilla bean, split lengthwise
9 egg yolks
3/4 cup sugar
2 tablespoons green tea powder

Steps:

  • In a saucepan over medium heat, combine the cream, half-and-half, and vanilla bean, stirring occasionally to make sure the mixture doesn't scorch on the bottom. When the cream mixture reaches a fast simmer (do not let it boil), set aside to infuse for 10 to 15 minutes.
  • In a medium bowl, whisk together the egg yolks and sugar. Whisking constantly, slowly pour the still-hot cream mixture into the egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees, the mixture will give off a puff of steam. When the mixture reaches 180 degrees it will be thickened and creamy, like eggnog. If you don't have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready; if the edges blur, the mixture is not quite thick enough yet. When it is ready, quickly remove it from the heat and whisk in the green tea. Meanwhile, half-fill a large bowl with ice water. Strain the mixture into a smaller bowl to smooth it and remove the vanilla bean. Rest the smaller bowl in the ice water and let the mixture cool, stirring often, then continue according to the directions of your ice cream maker.

VEGAN TOFU-BASED GREEN TEA SMOOTHIE

Vegan Tofu-Based Green Tea Smoothie image

Part of my Nasoya Madness series since I got tons of coupons for Nasoya Creations so I could get the tofu packs for almost nothing; and did lots of experiments most of which went well! I finally pulled my blender out of the closet again so I did lots of smoothies. This one is green tea, meant to have a powerful flavor. Feel free to add fruits, honey or other sweeteners, or make it non-vegan with yogurt or ice cream instead.

Tips:

  • Use high-quality green tea: The quality of the green tea you use will greatly impact the flavor of your ice cream. Look for a green tea that is fresh and has a strong, vibrant flavor.
  • Steep the green tea properly: To get the best flavor from your green tea, steep it properly. Use hot water that is just below boiling (around 175 degrees Fahrenheit) and steep the tea for 3-5 minutes.
  • Use a good quality tofu: The tofu you use should be firm and have a mild flavor. Avoid using silken tofu, as it will not hold up well in the ice cream.
  • Don't over-blend the ice cream: Over-blending the ice cream will make it icy and grainy. Blend the ice cream just until it is smooth and creamy.
  • Chill the ice cream thoroughly before serving: Chilling the ice cream thoroughly will help it to set and firm up. Chill the ice cream for at least 4 hours, or overnight, before serving.
