FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Fresh Tomato, Basil, and Garlic Sauce over Angel Hair Pasta image

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

QUICK SAUSAGE MEATBALLS WITH A TOMATO AND BASIL SAUCE, SPAGHETTI AND SWEET RAW PEAS

Quick Sausage Meatballs with a Tomato and Basil Sauce, Spaghetti and Sweet Raw Peas image

This is a fantastic recipe that completely celebrates everything I love about peas. Even though they only make an appearance right at the end, it's a star performance. I like to serve a pile of unshelled peas in the middle of the table so that everyone gets to shell some over their own plate. It's also an incredibly fast recipe - you can be sitting down to eat within a minute of the pasta being done. The key to getting it right, though, is to buy really good-quality sausages

Provided by Jamie Oliver

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 13

Olive oil
8 good-quality pork sausages
1 pound spaghetti
Sea salt
A few sprigs fresh marjoram, thyme or rosemary, leaves picked
11 ounces fresh peas, in their pods
1 block Parmesan, to serve
Olive oil
2 cloves garlic, peeled and finely sliced
1 small bunch fresh basil, leaves picked, stalks finely chopped
2 (14-ounce) cans good-quality plum tomatoes
Sea salt and freshly ground black pepper
Good quality balsamic vinegar

Steps:

  • Heat a large saucepan and add a few glugs of olive oil. Snip the sausages apart, then squeeze and pinch the meat out of the skins so that you get little meatball shapes - don't make them too big or they will take too long to cook. Try to get at least 3 balls out of each sausage. Don't worry about rolling them into perfect balls and making them look all fancy - rough and rustic is good! Put them into your pan. Keep frying and turning the meatballs until they're golden brown and cooked through.
  • Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the package instructions until al dente.
  • To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic and the chopped basil stalks and move them around the pan for a couple of minutes. Put some small basil leaves aside for later, and sprinkle the rest into the pan. Add the tomatoes and season carefully with salt and pepper, to taste. Bring to a simmer, break up your tomatoes a bit more with a spoon and add a swig of balsamic vinegar - it's lovely for adding sweetness to the sauce.
  • Add the herbs to the pan of sausage meatballs, tossing everything in all the lovely flavors. Cook for around 30 seconds. When your spaghetti is cooked, drain it and divide the pasta and meatballs between 4 bowls. Spoon over the tomato sauce. Sprinkle over the reserved basil leaves and serve with a handful of fresh peas per person in the middle of the table, so that everyone can have a go at shelling their own, and a little Parmesan for grating or shaving over the top.

GRILLED EGGPLANT STACKS WITH GOAT CHEESE, TOMATO AND BASIL SAUCE

Grilled Eggplant Stacks With Goat Cheese, Tomato and Basil Sauce image

A great summertime dish, this is an incredibly delicious recipe. I like to serve these eggplant stacks with grilled steak or chicken but these tasty stacks are good enough all on their own. The combination of the basil oil drizzled on the layers of eggplant with the goat cheese and tomato work so well together. You can't go wrong if you want to use feta instead of the goat cheese, I made a few with each and they are both equally delicious. If you are entertaining, these are a perfect choice to make ahead of time and than bake when you are ready to serve and they make a beautiful presentation!

Spaghetti Meatballs and Tomato-Basil Sauce image

Provided by Rachael Ray : Food Network

Time 1h20m

Yield 4 meatballs per person for dipping with sauce.

Number Of Ingredients 16

1/2 pound spaghetti, broken into pieces
Salt
1/4 cup pine nuts, lightly toasted
1 large bunch parsley, leaves only
1 bunch basil, leaves only
2/3 to 3/4 cup grated Parmigiano-Reggiano, a couple of handfuls
2 cloves garlic, grated or finely chopped
Freshly ground black pepper
Extra-virgin olive oil, about 1/3 cup plus some for liberal drizzling
2 pounds ground sirloin
1 large egg
A couple handfuls bread crumbs
1 small onion, finely chopped
1 small carrot, finely chopped or grated
1 cup beef stock
1 (28-ounce) can tomatoes (recommended: San Marzano)

Steps:

  • Heat oven to 425 degrees F.
  • Bring a medium sauce pot of water to a boil over high heat, salt water and cook pasta to al dente 7 minutes or so, drain and quick-cool on a baking sheet.
  • While pasta cooks, toast pine nuts. Make a thick herb pesto by placing the herbs, cheese, garlic and nuts in food processor with salt and pepper. Turn processor on and stream in about 1/3 cup olive oil - make the pesto very thick.
  • Place meat in a bowl. Season the meat with salt and pepper. Add cooked pasta, egg, bread crumbs and half the pesto to the meat. Mix to combine and form into 16 balls, and place on a parchment paper lined baking sheet. Let the spaghetti pop out of meatballs like porcupine quills. Coat balls with a little olive oil and roast 12 to 15 minutes until firm and golden in color. Remove from the oven and place on a serving platter.
  • While meat roasts heat a healthy drizzle olive oil in a sauce pot over medium-high heat. Add onions and carrots, season with salt and pepper, and saute for 5 minutes. Stir in the stock, add tomatoes and crush with the back of a wooden spoon. Cook for 5 minutes more, then stir in remaining pesto and transfer to a serving bowl or 4 individual ramekins for dipping.

TOMATO-AND-FENNEL-STUFFED SALMON WITH BASIL SAUCE

Tomato-and-Fennel-Stuffed Salmon with Basil Sauce image

Categories     Citrus     Fish     Herb     Tomato     Roast     Dinner     Basil     Seafood     Salmon     Fennel     Gourmet     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 8 to 10 servings

Number Of Ingredients 22

For fish
2 pounds plum tomatoes, halved lengthwise
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 3/4 teaspoons salt
1 teaspoon black pepper
2 teaspoons herbes de Provence
2 large fennel bulbs (sometimes labeled "anise"; 2 pounds), stalks cut off and discarded
1 (8-pound) whole salmon (preferably wild coho), cleaned, butterflied, and boned, leaving head and tail intact
1/4 cup dry white wine
For sauce
10 saffron threads
1/4 teaspoon hot water
1 cup mayonnaise
1/2 cup loosely packed fresh basil leaves
1/4 cup extra-virgin olive oil
1 tablespoon Dijon mustard
1 large garlic clove
1 1/2 teaspoons finely grated fresh orange zest
1/2 teaspoon salt
1/4 teaspoon black pepper
Special Equipment
an adjustable-blade slicer; heavy-duty foil

Steps:

  • Make fish:
  • Put oven racks in middle and lower third of oven and preheat oven to 400°F.
  • Toss tomatoes in a bowl with 1 tablespoon oil, teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon herbes de Provence. Arrange tomatoes, cut sides up, in a shallow baking pan and reserve bowl (do not wipe clean).
  • Quarter fennel lengthwise, then slice 1/8 inch thick with slicer. Toss fennel in reserved bowl with 1 tablespoon oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, and remaining teaspoon herbes de Provence, then spread out in a 17- by 12-inch heavy shallow baking pan.
  • Roast fennel in lower third of oven and tomatoes in middle of oven, stirring fennel halfway through roasting, until fennel begins to caramelize and tomatoes are browned lightly on edges (but are still juicy) and their juices have accumulated in bottom of pan, 40 to 50 minutes.
  • Remove from oven. If there are no tomato juices in pan, gently press on tomatoes to extract enough juice to measure 2 tablespoons (leave juices in pan). Increase oven temperature to 450°F.
  • Line a 17- by 12-inch shallow baking pan with heavy-duty foil and coat foil with 1 tablespoon oil. Position salmon diagonally in roasting pan, then open fish. Sprinkle inside of fish with remaining 3/4 teaspoon salt and 1/2 teaspoon pepper, then coat with 1 tablespoon oil. Arrange roasted tomatoes evenly inside fish on bottom half (with head and tail attached), reserving juices in pan (for sauce). Top tomatoes with roasted fennel, then pour wine over vegetables and close fish (like a book) to enclose stuffing (stuffing will not be completely covered). Secure opening with several wooden picks, then rub top of fish with remaining tablespoon oil. If head and tail hang over edge of pan, put a baseball-size ball of foil under head and a golf-ball-size ball of foil under tail to prop them up so that juices run into pan (head and tail will curve upward slightly).
  • Roast salmon in middle of oven until fish is just cooked through (thickest part will be opaque), about 25 minutes.
  • Make sauce while fish roasts:
  • Combine saffron and hot water in a small cup and let stand 1 minute. Blend together saffron mixture, remaining sauce ingredients, and 2 tablespoons reserved tomato juices in a blender until smooth. Transfer to a bowl and chill, covered, until ready to use.
  • To serve:
  • Slide whole fish (still on foil) onto a platter. To remove foil, lift head end of fish slightly with a long or wide spatula and push foil toward middle of fish. Lower head end back onto platter and lift tail end in same manner to gently remove foil completely. Serve fish with sauce on the side.

Place the butter in the pot and turn the heat to low. Add the shallots and stir until softened, about 1 minute. Add the reduced wine and the cream and simmer slowly for 2 minutes. Stir in the tomatoes and remove from heat. Taste and add salt if needed.
  • Place each snapper fillet on a plate and surround with clams. Spoon some sauce over and around the snapper. Scatter the basil. Serve.

SAUSAGE AND EGGPLANT-STUFFED SHELLS IN A TOMATO-BASIL CREAM SAUCE image

Categories     Pasta     Dinner

Number Of Ingredients 17

2 tablespoons olive oil
1 pound spicy Italian sausage, casings removed
2 cups chopped onion
1 large eggplant, cut into 1/2-inch cubes (about 7 cups cubed)
1 1/2 teaspoons salt
3/4 teaspoon crushed red pepper
2 tablespoons minced garlic
1/2 cup ricotta & mascarpone cheese
2/3 cup chopped frozen spinach
1 egg
1 cup freshly grated Parmesan
1/4 teaspoon sugar
1/2 (12-ounce) package jumbo pasta shells (about 18 shells)
2 cups Italian crushed tomatoes
1 1/2 cups heavy cream
1/4 cup finely chopped fresh basil leaves
4 ounces coarsely grated fontina cheese

Steps:

  • Directions In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat and saute the sausage until golden brown, stirring to break up the pieces, about 6 minutes. Add half of the onions and the eggplant, season with 3/4 teaspoon salt and 1/4 teaspoon crushed red pepper, and cook for 4 to 6 minutes, or until the vegetables are lightly caramelized and very soft. Add 1 tablespoon garlic and cook for 1 minute. Remove from the heat and transfer to a large bowl to cool. When the mixture has cooled to room temperature, stir in the ricotta or mascarpone cheese, spinach, 1/2 cup Parmesan cheese, and sugar. Stir to combine well. Lightly grease a deep 9 by 13-inch casserole or lasagna pan and set aside. Bring a large pot of salted water to a boil and cook the pasta shells until just al dente, 10 to 12 minutes. Drain and rinse under cold running water. Pat shells dry. Stuff the pasta shells with the sausage-eggplant mixture and place in the prepared casserole dish. In a large saucepan, heat the remaining tablespoon of olive oil over medium high heat and saute the remaining chopped onions until translucent, about 4 minutes. Add the remaining tablespoon of garlic and cook until fragrant, 1 to 2 minutes. Add the crushed tomatoes, remaining 3/4 teaspoon salt, and remaining 1/2 teaspoon crushed red pepper and cook for 5 minutes. Add the heavy cream and cook until the sauce is reduced in volume by about 1/3, about 20 minutes. Preheat the oven to 350 degrees F. Add the basil to the sauce and pour the sauce over the shells in the casserole. Sprinkle with the fontina cheese and the remaining Parmesan. Cover the casserole tightly with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the sauce is lightly browned in spots and bubbly around the edges, about 15 minutes longer. Let stand for 10 minutes before serving.

Yield Makes 8 servings

Number Of Ingredients 11

Olive oil
1 1/4 pounds plum tomatoes, halved lengthwise
2 large red bell peppers, halved lengthwise, seeded
5 tablespoons butter
4 large shallots, minced
1 14 1/2-ounce can low-salt chicken broth
1/2 cup dry white wine
3/4 cup chopped fresh basil
1/2 teaspoon dried crushed red pepper
8 8-ounce filet mignon steaks (each about 1 inch thick)
1/4 cup water

Steps:

  • Preheat broiler. Brush large baking sheet with oil. Place tomatoes and bell peppers, cut side down, on prepared sheet. Broil until tomatoes and peppers begin to char and blister, about 5 minutes. Working in batches, add steaks to hot dry skillet and cook about 4 minutes per side for medium-rare. Transfer to platter; cover to keep warm. Add 1/4 cup water to skillet; stir to scrape up browned bits. Add sauce to skillet; reduce heat and simmer until heated through, about 4 minutes. Remove from heat. Whisk in remaining 4 tablespoons butter, then remaining 1/4 cup basil. Season sauce with salt and pepper.

Tips:

  • Fresh ingredients: Use ripe, flavorful tomatoes and fresh basil for the best flavor.
  • Simmer gently: Don't boil the sauce, as this can make it bitter. Simmer it gently over low heat for at least 30 minutes to allow the flavors to meld.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this sauce, as it has a rich, fruity flavor.
  • Season to taste: Add salt, pepper, and sugar to taste. You may also want to add a pinch of red pepper flakes for a little heat.
  • Use the sauce immediately: Tomato sauce is best when used immediately. However, it can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months.
