Tips:

  • Choose the right salmon. Look for wild-caught salmon if possible, as it is lower in contaminants and has a more robust flavor. If you are using farmed salmon, choose one that is certified organic or raised in a sustainable manner.
  • Use ripe tomatoes and onions. The flavor of the tomatoes and onions will be more pronounced if they are ripe. Look for tomatoes that are deep red and onions that are firm and have no blemishes.
  • Don't overcrowd the pan. When cooking the salmon, make sure to give it enough space in the pan so that it cooks evenly. If the pan is too crowded, the salmon will steam instead of fry and will not be as crispy.
  • Cook the salmon until it is flaky. The salmon is done cooking when it is flaky and opaque throughout. You can test this by inserting a fork into the thickest part of the salmon. If the fork comes out clean, the salmon is done.
  • Serve the salmon immediately. Salmon is best served immediately after it is cooked. If you need to keep it warm, you can place it in a warm oven or on a warming tray.
