Provided by Pierre Franey

Categories     dinner, easy, quick, main course

Time 15m

Yield 4 servings

Number Of Ingredients 11

4 boneless shell steaks, about 8 ounces each, with the excess fat removed
Salt to taste
4 tablespoons cracked peppercorns, white or black
1 tablespoon vegetable oil
2 tablespoons finely chopped shallots
1/2 cup dry red wine
1/2 cup beef broth, fresh or canned
2 teaspoons tomato paste
2 sprigs fresh thyme or 1/2 teaspoon dried
2 tablespoons butter
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the steaks with salt.
  • Use a mallet or meat pounder to crush the peppercorns, but not too fine. Sprinkle the peppercorns evenly over the steaks on both sides. Press down with your hands to help the peppercorns adhere to the meat.
  • Heat the oil in a cast-iron skillet large enough to hold the steaks in one layer. When the skillet is hot and almost smoking, add the steaks, cook about 3 minutes until browned, then turn. Cook about 2 to 3 minutes more for medium rare. Remove to a warm platter.
  • Pour the fat out of the skillet, add the shallots and cook, stirring, until they are wilted. Do not brown. Add the wine, broth, tomato paste and thyme. Reduce to half a cup. Add any liquid that may have accumulated around the steaks. Bring to a simmer. Remove from heat and swirl in the butter.
  • Remove the thyme sprigs and pour the sauce over the steaks. Sprinkle with parsley.

SIRLOIN WITH TOMATO, OLIVE, AND FETA TOPPING

Sirloin with Tomato, Olive, and Feta Topping image

This steak fits right into your schedule-it can marinate for as little as 30 minutes or as long as 8 hours-and it is equally good whether cooked on the stovetop, grilled, or broiled. Rice and Vegetable Pilaf (page 252) goes well with it.

Yield Serves 4; 3 ounces beef and 1/2 cup topping per serving

Number Of Ingredients 10

1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 medium garlic cloves, minced
1 teaspoon dried oregano, crumbled
1/4 teaspoon pepper
1 pound boneless top sirloin steak, all visible fat discarded, cut into 4 pieces
2 cups grape tomatoes or cherry tomatoes, halved
2 tablespoons chopped kalamata olives
2 tablespoons crumbled fat-free feta cheese
1 tablespoon red wine vinegar

Steps:

  • In a large shallow glass dish, stir together the lemon zest, lemon juice, garlic, oregano, and pepper. Add the beef, turning to coat. Cover and refrigerate for 30 minutes to 8 hours, turning occasionally.
  • Meanwhile, in a medium bowl, stir together the topping ingredients. Cover and refrigerate until ready to serve.
  • Drain the beef, discarding the marinade.
  • Heat a large nonstick skillet over medium-high heat. Cook the beef for 4 to 5 minutes on each side, or to the desired doneness. (If you prefer, grill the beef on medium high or broil it 5 to 6 inches from the heat as directed.) Serve the beef with the topping.

SIRLOIN STEAK WITH TOMATO AND CILANTRO SAUCE

Sirloin Steak with Tomato and Cilantro Sauce image

Provided by Françoise Meyer

Categories     Tomato     Low Carb     Steak     Summer     Cilantro     Bon Appétit

Yield Makes 4 to 6 servings

Number Of Ingredients 7

1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 1 1/4-pound top sirloin steak, about 1 inch thick
3 tablespoons olive oil
4 large garlic cloves, thinly sliced
3/4 pound plum tomatoes, seeded, diced
1 cup chopped fresh cilantro leaves

Steps:

  • Rub cumin and chili powder onto both sides of steak, then sprinkle with salt and pepper. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add steak to skillet and sauté until cooked to desired doneness, about 4 minutes per side for medium-rare. Transfer steak to plate. Add remaining 1 tablespoon oil to skillet. Add garlic and stir 1 minute. Add tomatoes and cilantro. Cook until tomatoes begin to soften, about 4 minutes. Season sauce with salt and pepper.
  • Cut steak crosswise into thin slices. Arrange slices on platter. Mix any steak juices into sauce. Spoon sauce over steak.

Tips:

  • Choose high-quality ingredients, especially the sirloin steak. Look for steaks that are well-marbled and have a deep red color.
  • Make sure the steak is at room temperature before cooking. This will help it cook evenly.
  • Season the steak generously with salt and pepper. You can also use other seasonings, such as garlic powder, onion powder, or paprika.
  • Cook the steak over high heat to create a nice sear. Then, reduce the heat and cook the steak to your desired doneness.
  • Let the steak rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the steak.
  • Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

The tomato and pepper sirloin steak is a delicious and easy-to-make dish that is perfect for any occasion. With just a few simple ingredients, you can create a meal that is sure to impress your family and friends. So next time you're looking for a quick and easy weeknight meal, give this recipe a try.
