1 cup chopped onions
1 cup chopped celery
1 cup chopped carrots
2 teaspoons minced garlic
2 tablespoons vegetable oil
2 ½ cups water
2 tomatoes, diced
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (10.75 ounce) can chicken broth
¼ cup uncooked barley
⅛ teaspoon ground black pepper

Steps:

  • In a large saucepan over medium heat, combine the onions, celery, carrots, garlic and oil and saute for 5 to 10 minutes, or until all vegetables are almost tender.

4 quarts water

4 large tomatoes, diced
1 (16 ounce) jar medium hot salsa (Pace Picante, recommended)
1 (14 1/2 ounce) can fat free chicken broth
3 cups water
1 bunch green onion, chopped
1 cup quick-cooking barley
1 (15 ounce) can black beans, drained, rinsed
1 1/2-2 lbs chicken breasts, cooked, cut into bite-sized pieces

Steps:

  • In a 6-quart saucepan, combine the first 5 ingredients (tomatoes, salsa, chicken broth, water, green onions).
  • Over high heat, bring to a boil; cover and reduce heat to low. Simmer about 20 minutes, stirring occasionally.
  • Blend soup (I use a small hand immersion blender - this step is optional, but how I prepared the soup).
  • Add barley, chicken breast and black beans. Simmer 20-25 minutes, stirring occasionally, or until barley is tender.

Steps:

  • In 4-quart saucepan or Dutch oven, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.

6 cups water or 6 cups vegetable stock
2 large yellow onions
3 tablespoons butter (sub a plant-based oil for vegan soup)

1 (14 ounce) can coconut milk

1 teaspoon cumin

1/2 c red peppers,chopped
1/2 c onions,chopped
1 c celery,chopped
1/4 c carrots, chopped
1 clove garlic,minced

8 1/2 c chicken broth
1 can(s) (28 ounce) crushed tomatoes, with juice
1 c pearl barley, uncooked
1 c dry lentils,rinsed & drained
1 c tomato juice
2 c water
2 tsp basil, dried
1 tsp oregano, dried
1/2 tsp thyme, dried
1 bay leaf
8 sun dried tomatoes (packed in oil) drained and chopped
1 c sliced mushrooms (optional)

Steps:

  • 1. In a large kettle or stock pot, add oil and over medium heat saute' red pepper, onion, celery, carrots, and garlic, (mushroom optional) until tender

1 large onion, chopped
4 cloves of garlic, smashed and chopped
1 gallon of vegetable stock "Low Sodium" or water
2 lbs of tomatoes, chopped
( use up your overripe tomatoes here)
1 cup of pearled barley
1 cup of basil leaves, chopped
Celtic Sea Salt and Pepper
Bunch of fresh spinach

  • Heat the Canary Island Garlic and Herb Olive oil in your soup pot. Add onion and saute till transparent, then add garlic and saute till garlic starts to brown. Add tomatoes and stock (or water) and bring to a boil. Add barley, stir, lower heat to medium and cook 30 minutes, partially covered, till barley is done. Add Fresh spinach at the end and let wilt.
