BASIL TOMATO SOUP WITH ORZO

Basil Tomato Soup with Orzo image

The soup is so scrumptious that it is worth the time it takes to cut up the fresh basil. I believe it is even better the next day, after the flavors have had a chance to blend in the refrigerator overnight.-Tonia Billbe, Elmira, New York

Tips:

  • Use high-quality ingredients: Fresh, ripe tomatoes and fragrant basil will make a big difference in the flavor of your soup.
  • Don't overcrowd the pot: If you add too much orzo, it will absorb all the liquid and make the soup too thick. Add it gradually and cook it until it is tender but still has a slight bite.
  • Season to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of red pepper flakes for a little spice.
  • Let the soup rest: After cooking, let the soup rest for a few minutes before serving. This will allow the flavors to meld and develop.
  • Garnish with fresh herbs: Before serving, garnish the soup with fresh basil, parsley, or chives. This will add a pop of color and flavor.

Conclusion:

Tomato basil orzo soup is an easy and delicious meal that is perfect for a weeknight dinner or a casual lunch. It is also a great way to use up leftover tomatoes and basil. With its bright flavors and hearty texture, this soup is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give tomato basil orzo soup a try!
