BRAISED CHICKEN THIGHS AND LEGS WITH TOMATO

Braised Chicken Thighs and Legs with Tomato image

Provided by Alex Guarnaschelli

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 13

4 tablespoons canola oil
6 chicken thighs
6 chicken legs
Kosher salt
1 teaspoon whole cumin seeds
2 teaspoons chili flakes
1 large white onion, peeled, halved and thinly sliced
1 large ginger knob, peeled and grated
6 garlic cloves, peeled and halved lengthwise
1 (28-ounce) can whole, peeled tomatoes
2 cinnamon sticks
4 fresh or dried bay leaves
Water, as needed

Steps:

  • Heat the canola oil in a large skillet over high heat. Arrange the chicken thighs and legs on a tray in a single layer and season them with salt, to taste. Turn the pieces on their other side and season again. When the oil begins to smoke lightly, carefully add the chicken to the oil. Do not overcrowd the pan. Resist the temptation to move or turn the pieces. Allow them to brown on their first side, about 3 to 5 minutes. Use metal tongs to turn the chicken pieces to sear their second side, about 3 to 5 minutes. Transfer the chicken to a tray and set it aside.
  • In the same skillet, add the cumin seeds and chili flakes, stirring rapidly to give them a quick toast, about 10 to 15 seconds. Add the onions, ginger and garlic and stir to combine. Season the ingredients with salt, to taste, then add the tomatoes, cinnamon, and bay leaves. Allow the mixture to cook and all the flavors to come together, about 10 minutes. Add the chicken back to the pan, keep the heat low and continue cooking until the chicken is cooked through, 30 to 45 minutes. (Chef's note: If the sauce becomes overly thick or begins to stick to the bottom of the skillet, feel free to add some water, about 1/2 cup at a time.)
  • When the chicken is cooked through, remove and discard the cinnamon sticks and bay leaves. Taste for seasoning and transfer to a serving bowl. Serve alongside the braised cabbage, if desired.

Provided by Mark Bittman

Categories     easy, side dish

Time 1h

Yield 4 servings

Number Of Ingredients 6

2 pounds leeks, preferably slender
1 pound plum tomatoes
1/4 cup olive oil
Salt and pepper
Grated Parmesan, optional
Chopped parsley, optional

Steps:

  • Heat the oven to 350. Trim the leeks of the hard green parts and outer skin, and wash them well. If they're fat, quarter them the long way. Chop the tomatoes and put them in a gratin dish long enough to hold the leeks but narrow enough so that everything is snug. Add the oil and nestle the leeks in there; sprinkle with salt and pepper.
  • Bake, checking and stirring occasionally, until the tomatoes become saucy and the leeks are very, very tender, about an hour. If you like, sprinkle with Parmesan and raise the heat until the cheese melts and browns a bit. Otherwise, sprinkle with chopped parsley and serve hot or warm.

2 cups homemade or low-sodium chicken stock
1 cup white wine
3 tablespoons unsalted butter

BUTTERY LEEKS WITH PARMESAN AND THYME

Buttery Leeks with Parmesan and Thyme image

Rather than sizzling on the stove, these leeks nestle into a roasting pan with white wine, vegetable broth, a few sprigs of thyme, and a scattering of cubed butter. An hour or so later, you shower them with nutty-salty Parmesan and slide them under the broiler for one last burnishing blast.

Categories     Holiday Planning & Ideas     Easter     Easter Recipes

Time 1h30m

Number Of Ingredients 7

2 pounds small-to-medium leeks (6 to 8)
1/2 cup dry white wine, such as Sauvignon Blanc
1 cup low-sodium vegetable or chicken broth
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter, cut into cubes
4 thyme sprigs
1 ounce Parmigiano-Reggiano, grated (1/2 cup)

Steps:

  • Preheat oven to 400°F. Trim dark-green tops and root ends from leeks and discard; halve lengthwise. Remove thick, tough outer layers (2 to 4 total, depending on size), discarding or reserving for another use. Thoroughly wash and drain leeks, keeping them intact. Arrange in a snug single layer, cut sides up, in a broiler-safe baking dish or skillet.
  • In a small saucepan, boil wine 30 seconds. Add broth and return to a boil; season generously with salt and pepper. Pour mixture over leeks, then sprinkle with butter and thyme. Cover dish with parchment-lined foil.
  • Roast 45 minutes. Uncover and continue roasting until leeks are very soft and broth mixture is reduced by half, 20 to 22 minutes.
  • Switch oven to broil. Sprinkle leeks with cheese. Broil 6 to 8 inches from heating element until bubbly and browning in places, 3 to 5 minutes. Serve warm, with some of braising liquid.

Tips:

  • Choose the right leeks: Look for leeks that are firm and have a deep green color. Avoid leeks that are wilted or have yellow or brown spots.
  • Trim the leeks properly: Cut off the root end and the dark green tops of the leeks. Then, slice the leeks lengthwise in half and rinse them thoroughly to remove any dirt or grit.
  • Use a variety of tomatoes: This recipe calls for a combination of fresh and canned tomatoes. You can use any type of fresh tomatoes you like, but Roma tomatoes are a good choice because they are meaty and have a low water content. For the canned tomatoes, you can use diced tomatoes, crushed tomatoes, or tomato sauce.
  • Add some herbs and spices: This recipe uses a simple combination of garlic, thyme, and bay leaves to flavor the leeks and tomatoes. You can also add other herbs and spices that you like, such as oregano, basil, or rosemary.
  • Cook the leeks and tomatoes until they are tender: This recipe calls for cooking the leeks and tomatoes for about 30 minutes. This will allow the leeks to soften and the tomatoes to break down and release their juices.
  • Serve the leeks and tomatoes over rice or pasta: This dish is a great main course or side dish. Serve it over rice or pasta, or with a side of crusty bread.

Conclusion:

Tomato braised leeks are a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of leeks, tomatoes, and herbs creates a flavorful and satisfying dish that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this recipe a try.
