1 (6 ounce) can tomato paste
2 tablespoons lemon juice
2 tablespoons white sugar
1 teaspoon salt, or to taste
3 cups water, more if needed

Steps:

  • Blend 2 cups water, tomato paste, lemon juice, sugar, and salt together in a blender until smooth; pour into a 1/2 gallon container. Stir 3 cups water into mixture. Refrigerate until thickened, about 1 hour. Add 1 more cup water if juice is too thick.

3/4 pound tomatoes (about 4 small), sliced
1/3 cup chopped onion
1/4 cup coarsely chopped green pepper
1/4 cup water
2 tablespoons sliced celery
1-1/2 teaspoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 30-35 minutes. Cool. , Transfer tomato mixture to a blender; cover and process until smooth. Refrigerate until chilled.

1 tablespoon finely chopped dill weed
1 teaspoon grated horseradish

  • Combine all ingredients in glass pan. Heat throughly. Pour into 6 pint jars process in water bath 30 minutes.

3 lb beefsteak tomatoes, quartered
1 small fennel bulb (sometimes called anise; 1/2 lb), stalks cut off and discarded, reserving fronds, and bulb chopped
2 celery ribs with leaves, chopped
1 cup loosely packed fresh flat-leaf parsley sprigs, chopped
2 teaspoons fine sea salt, or to taste
Special Equipment
3 (20-inch) squares of cheesecloth

Steps:

  • Finely chop all ingredients in batches in a food processor, transferring to a large bowl. Let stand at room temperature, loosely covered, 1 1/2 hours.
  • Line a large sieve with layered cheesecloth squares and set over a large nonreactive pot. Carefully pour tomato mixture into center of cheesecloth, then gather up edges of cheesecloth to form a large sack and, working over sieve, squeeze solids to extract as much juice as possible. Discard solids.
  • Chill juice until cold, about 1 hour, and stir before serving. (Juice will be pale in color but flavorful.)

1 (12 ounce) cold beer, I use Budweiser
1/4 cup spicy vegetable juice
1 dash celery salt
1 dash louisiana hot sauce, for the brave
1 dash Worcestershire sauce, 1 drop (optional)
1 dash pepper
2 green onions, for stirrers
2 celery ribs, with leafy tops for stirrers

Steps:

  • In small pitcher or martini shaker, slowly pour in beer.
  • Slowly/gently stir in tomato juice.
  • Stir in 1 drop Worcestershire only if you really, really like it, and a dash of hot sauce if you like it extra hot!
  • Add a few ice cubes, and swirl, don't shake!, til chilled.
  • Strain and slowly pour into 2 chilled martini glasses. Try not to let it foam.
  • Srinkle tops of each with a little celery salt and pepper.
  • Place a celery stick and green onion into each glass for "stirrers".
  • Enjoy!
  • *Note: I use the V-8 Spicy Hot Tomato/Vegetable juice for this.
