One of my favorite easy fix dinners. The recipe originally came from the back of a kielbasa package years ago but I doctored it up with many different ingredients to make it my own. Everyone in my house loves it.

2 tablespoons olive oil
1 medium onion (diced)
2 cloves garlic (diced)
1 package of fully cooked Polish kielbasa or 1 package lite turkey kielbasa (sliced)
1 (14 ounce) can diced tomatoes
1 (14 ounce) can tomato sauce
18 ounces penne pasta
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon white vinegar

Steps:

  • Cook penne pasta as directed in separate pot.
  • In a large skillet add olive oil, onion, garlic, and sliced kielbasa over cook over medium heat until onions are tender.
  • Stir in diced tomatoes (undrained), tomato sauce, oregano, parsley, vinegar, and cooked pasta.
  • Cover and simmer for 15 minutes.
  • Serve topped with parmesan cheese, if desired.

1 medium red bell pepper, cut into 1-inch pieces
1 small onion, cut into thin wedges
1 (9-oz.) pkg. frozen sugar snap peas
1/2 lb. smoked turkey kielbasa, sliced
1/2 cup milk
1 loaf (8 oz. box) VELVEETA™ Original Cheese, cubed

Steps:

  • Cook penne as directed on package. Drain; cover to keep warm.
  • Meanwhile, heat 12-inch nonstick skillet or Dutch oven over medium-high heat until hot. Add bell pepper, onion and sugar snap peas; cook 4 to 5 minutes or until vegetables are crisp-tender, stirring frequently. Drain, if necessary.
  • Reduce heat to medium. Add kielbasa, milk and cheese to vegetables. Cook over medium heat for 3 to 4 minutes or until cheese is melted and sauce is smooth, stirring constantly.
  • Add cooked penne; stir gently to coat. Cook 1 to 2 minutes or until thoroughly heated, stirring occasionally.

1 lb kielbasa, sliced 1/4 inch thick
1 (10 3/4 ounce) can condensed cream of celery soup
1 1/2 cups milk
4 cups cooked penne (8 oz uncooked)
1 1/2 cups shredded cheddar cheese
1 1/2 cups French-fried onions
1 cup frozen peas

Steps:

  • Preheat oven to 375°F.
  • Spray a skillet with cooking spray and brown kielbasa, drain.
  • In a 3 quart casserole, combine soup and milk.
  • Add penne, kielbasa, 3/4 cheese, 1/2 cup onions and peas, stir to combine.

1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil for pasta.

1 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon sugar
1 1/2 tablespoons cold unsalted butter, cut into pieces
1/2 cup sour cream
1/4 cup plus 3 tablespoons water
1/2 lb kielbasa (Polish smoked sausage), cut diagonally into 1/2-inch-thick slices
1 lb plum tomatoes, cut into 1/2-inch pieces
1/2 cup chopped onion
1 fresh jalapeño chile, minced
1/3 cup chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
2/3 cup sour cream stirred

  • Preheat oven to 425°F.
  • Sift together flour, cornmeal, baking powder and soda, salt, and sugar into a bowl and blend in butter with your fingertips until mixture resembles coarse meal.
