2 tbsp olive oil
1 red onion , quartered and sliced
85g chorizo , skinned and finely chopped
250g mixed tomatoes - sliced, halved or quartered, depending on size (red, gold, green and yellow look good together)
400g can cannellini beans , drained
1 avocado , stoned, peeled and sliced
good handful baby spinach
2 tbsp sherry vinegar
1 garlic clove , chopped
1 tbsp chopped oregano
crusty bread , to serve

  • Heat half the oil in a small pan, add the onion and chorizo, and cook over a low heat until the oil starts to be released from the sausage.
  • Meanwhile, tip the tomatoes, beans, avocado and spinach into a salad bowl - but keep an eye on the chorizo to ensure that it doesn't burn.

2 pounds Yukon gold potatoes, skin on, cut into 1-inch chunks

1 1/4 cup extra-virgin olive oil
1 tablespoon chopped garlic
1 teaspoon fresh thyme
1 tablespoon fresh parsley
1/4 cup Spanish sherry vinegar
1 teaspoon dijon mustard
2 pounds fresh mozzarella cut into 1/4-inch slices
2 pounds vine-ripened tomatoes cut in 1/4-inch slices
1 pound organic mesclun
1 cup parsley leaves
bunch of scallions (chop all the white and some of the green)
3/4 pound oil-cured olives, pitted and julienned
3/4 cup toasted walnuts
salt and pepper to taste

Steps:

  • Drain the peppers and, in a bowl, mix with 1/4 cup olive oil.

1 tablespoon sherry vinegar
