TOM'S BLACKENED SEASONING

For Blackened fish or chicken (great on any type of fish, especially on denser types of fish). The nice thing about this recipe is that the dish doesn't taste burnt even though you can get a nice blackened look. The sugar and the thyme caramelize and give it a wonderful flavor. All my friends love it.

Tips:

  • Choose a good quality blackening seasoning. There are many different brands and varieties available, so be sure to read the labels carefully and choose one that suits your taste. Some popular brands include Tony Chachere's, Zatarain's, and Paul Prudhomme's.
  • Make sure your cast iron skillet is properly seasoned. This will help to prevent the food from sticking and will also give it a nice, even sear.
  • Preheat your skillet over high heat. This is important to create a good sear on the food.
  • Add a small amount of oil to the skillet. This will help to prevent the food from sticking.
  • Season the food liberally with the blackening seasoning. Be sure to coat all sides of the food evenly.
  • Cook the food for a few minutes per side, or until it is cooked through. Do not overcrowd the skillet, or the food will not cook evenly.
