A hearty bean soup to warm you up on a cold fall or winter night.

Categories     Soup

Time 2h

Yield 6

Number Of Ingredients 17

8 oz. dried Navy or Cannellini beans
6 cups of fresh water
1 sm. red onion, chopped
2 med. celery stalks (with their leaves), thickly sliced
2 med. carrots, thickly sliced
2 med. garlic cloves, minced
⅓ cup extra virgin olive oil
2 large bay leaves
1½ cups tomato passata, like Pomi (or thick crushed tomatoes)
1 TBSP. tomato paste
1 med. Yukon gold potato, cubed
½ tsp. dried Greek oregano
¾-1 tsp. sea salt
--- freshly ground pepper
--- red pepper flakes
1-2 TBSP. vinegar
⅓ cup extra virgin Greek olive oil

Steps:

  • Pick over and rinse the beans, discard malformed or stone-like ones. Soak the beans for at least 8 hours or overnight (preferably).
  • The next morning, drain and rinse the beans. Place them in a large pot with just enough fresh water to cover them. Bring to a boil. You will notice that white foam will rise to the surface of the water. Remove it with a spoon and then drain the beans in a colander. (This step is necessary to get rid of the impurities and it also makes the beans much easier on your stomach!)
  • Place the beans back in the pot with the six cups of fresh water. Bring to a boil, reduce the heat to medium-low, and simmer for about 30 minutes. While the beans cook, prep the vegetables.
  • Add the onion, celery, carrots, garlic, ⅓ cup of olive oil and bay leaves to the pot. Simmer, partially covered for about 30 minutes, stirring occasionally.
  • Next, add the tomatoes, tomato paste, potato and the seasoning. Cover the pot partially and continue simmering for about 30 minutes more, or, until the beans are very tender and the soup is thick and creamy (*see note). Check to see if a little more liquid is needed, and if it does add a little warm water. The consistency of the soup should be thick.
  • Just before removing from the heat, discard the bay leaves and stir in the vinegar and the remaining ⅓ cup of olive oil. Taste and adjust the seasoning.
  • Serve hot with some hearty bread, seasoned olives and Greek Feta cheese.

TRADITIONAL COSTA RICAN BEAN SOUP

Traditional Costa Rican Bean Soup image

One of the local favorites in Costa Rica, it's a wonderful and comforting meal. Black beans are the best in my opinion! I would recommend spicing this up a little with some hot sauce or even some slices of fresh hot peppers! It's very simple to make as well.

Time 2h20m

Yield 8 serving(s)

Number Of Ingredients 8

1 kg beans
1/2 white onion
1/2 avocado
6 soft tortillas
cream
2 chiles guajillos
white cheese
1 clove garlic

Steps:

  • Cook the beans, in the express cooker, put the beans, the water, the onion, and 1 garlic clove.
  • Let them get cooked, and soft.
  • Take the beans and let them get a little cold. Take them into the blender with the water they cooked in.
  • Cut the tortillas in small pieces, and fry them until they are hard.
  • In a pot put the beans you just blended, add some chicken broth, and the tortillas and let it boil.
  • Cut the cheese in small cubes.
  • Cut the chiles in circles.
  • Cut the avocado in small cubes as well.
  • After the beans with the chicken broth has boiled, add a little salt, if you want.
  • Then put some avocado, some chile, cream, and some cheese, in every dish.
  • Then add the soup, and enjoy it.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. You can also use a quick-soak method by boiling the beans for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of beans: Don't be afraid to experiment with different types of beans. Some popular choices include pinto beans, black beans, kidney beans, and navy beans. You can also use a mix of beans for a more flavorful soup.
  • Add vegetables and herbs: Vegetables and herbs add flavor and nutrients to the soup. Some good choices include onions, carrots, celery, garlic, tomatoes, and chili peppers. You can also add herbs such as oregano, thyme, and bay leaves.
  • Season the soup well: Don't be afraid to season the soup to taste. Some common seasonings include salt, pepper, cumin, and chili powder. You can also add a splash of vinegar or lemon juice for a bit of acidity.
  • Serve the soup with your favorite toppings: Some popular toppings for bean soup include sour cream, cheese, avocado, and cilantro. You can also serve the soup with a side of bread or crackers.

Conclusion:

Bean soup is a delicious, hearty, and nutritious meal that is perfect for a cold day. It is also a great way to use up leftover beans. With a few simple ingredients and a little bit of time, you can make a delicious pot of bean soup that the whole family will enjoy.
