GRANDMA'S CREAMY POTATO SALAD



Grandma's Creamy Potato Salad image

This potato salad is just like Grandma's.

1 ½ pounds red potatoes, peeled
1 ½ cups mayonnaise
1 cup chopped celery
½ cup chopped onion
1 tablespoon white vinegar
1 tablespoon prepared yellow mustard
1 teaspoon salt
¼ teaspoon ground black pepper
4 hard-cooked eggs, chopped
1 teaspoon paprika, or to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool enough to handle, 10 to 15 minutes. Cut into cubes.
  • Mix mayonnaise, celery, onion, vinegar, mustard, salt, and pepper together in a large bowl. Add potatoes and mix to combine. Stir in eggs and sprinkle with paprika.

I have combined a couple of my favorite potato salad recipes to come up with this one. I use it for all the holidays.

Number Of Ingredients 11

5 lbs potatoes, peeled & cut into small chunks
6 hard-boiled eggs, cooled & peeled
1/2 cup dill pickle (optional)
1 1/2 cups Miracle Whip (sometimes I use a mixture of both) or 1 1/2 cups mayonnaise (sometimes I use a mixture of both)
2 tablespoons yellow mustard
1/4 cup pickle juice (dill not sweet)
1/4 cup half-and-half or 1/4 cup whipping cream
1/2-1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon black pepper

Steps:

  • Boil the potatoes until just tender when poked with a fork, remove and drain.
  • Place the potatoes into a large bowl & let cool to room temperature. (I like to mash about half of the potatoes then add them back in with the chunks).
  • Cut the eggs in half then remove the yolks. Place the yolks into a small bowl used for mixing.
  • Add the egg whites & pickles (if using) to a food processor then chop until finely diced. Stir into the potatoes.
  • Gently mash the yolks with a fork then mix in the mayonnaise, mustard, pickle juice, cream, sugar & spices.
  • Whisk until creamy then pour over potato mixture. Gently stir until the potatoes are coated with the mayo mixture.
  • Cover and refrigerate at least 1 hour.

1 1/2 pounds round red or white potatoes (about 6 medium), peeled
1 1/2 cups mayonnaise or salad dressing
1 tablespoon white or cider vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1/4 teaspoon pepper
2 medium stalks celery, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
4 hard-cooked eggs, chopped
Paprika, if desired

Steps:

  • Place potatoes in 3-quart saucepan; add enough water to cover potatoes. Cover and heat to boiling; reduce heat to low. Cook covered 25 to 30 minutes or until potatoes are tender; drain. Let stand until cool enough to handle. Cut potatoes into cubes.
  • Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl.
  • Add potatoes, celery and onion; toss. Stir in eggs. Sprinkle with paprika. Cover and refrigerate at least 4 hours to blend flavors and chill. Store covered in refrigerator.

3 pounds red potatoes
Kosher salt
6 large eggs
1 cup mayonnaise
2 tablespoons yellow mustard
2 stalks celery, chopped
3 tablespoons chopped fresh parsley
2 fresh chives, chopped
1 white onion, finely chopped
Freshly ground pepper

Steps:

  • Place the potatoes and 2 heaping tablespoons of salt in a large pot of water. Bring the water to a boil and cook until the potatoes are fork-tender, 10 to 15 minutes. Drain, then chop into 1/2-inch pieces.
  • Meanwhile, put the eggs in a large saucepan and cover with water. Bring to a boil, then reduce to a simmer and cook until hard-boiled, about 10 minutes. Drain and run under cold water to cool. Peel the eggs and chop.
  • Combine the potatoes, mayonnaise, mustard, celery, parsley, chives, onion and a pinch each of salt and pepper in a large bowl. Toss to coat the potatoes with the dressing, then add the hard-boiled eggs. Gently stir the potato salad, taking care not to mash the eggs.

This is the Potato Salad I had grown up with...nothing compares to it. So after getting frustrated at my mom's lack of measuring, I was finally able to get the right measurements for my Mom's Classic (Creamy) Potato Salad.

6 -8 russet potatoes (with Skins)
6 eggs, hard boiled
1 large onion, diced
6 tablespoons white vinegar
6 tablespoons sugar
1 1/2-3 teaspoons yellow mustard, prepared
2 cups Miracle Whip
1/2-1 teaspoon paprika (for garnish)

Steps:

  • Boil potatoes in salted water until fork tender (about 10 - 20 minutes).
  • Remove from water and let cool on the counter.
  • Hard boil the eggs.
  • Place potatoes (with skins) and hard boil eggs in the refrigerator overnight.
  • Peel and dice the potatoes and place in a bowl.
  • Peel and dice the eggs and place in the bowl with potatoes. (Note: Reserve 7 egg slices to decorate the top of potato salad.).
  • Dice onion and add to the potato and egg mixture.
  • In another bowl, mix vinegar, sugar, yellow mustard, and Miracle Whip until smooth.
  • Pour on top of potatoes, egg, and onion and gently mix until thoroughly combined.
  • Smooth out the top and sprinkle with paprika and arrange 7 egg slices on the top.
  • Refrigerate at least 3 hours to let the flavors meld.

Steps:

6 medium potatoes, peeled and cubed
1/4 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons salt
1 teaspoon ground mustard
1 teaspoon pepper
3/4 cup water
2 large eggs, beaten
1/4 cup white vinegar
4 hard-boiled large eggs
2 celery ribs, chopped
1 medium onion, chopped
Sliced green onions, optional

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool to room temperature., Meanwhile, in a small heavy saucepan, combine flour, sugar, salt, mustard and pepper. Gradually stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat and cool completely. Gently stir in vinegar., Chop and set aside 1 hard-boiled egg; chop the remaining hard-boiled eggs. In a large bowl, combine the potatoes, celery, onion and eggs; add dressing and stir until blended. Refrigerate until chilled. Garnish with reserved chopped egg and, if desired, sliced green onions.
