TRADITIONAL-STYLE NEW MEXICO GREEN CHILE SAUCE

Traditional-Style New Mexico Green Chile Sauce image

Every New Mexican cook has a green chile sauce, but it has to be very good sauce, or her reputation as a good cook suffers. They serve this sauce at any meal. At breakfast it is served over eggs or potatoes. It is used over burritos, in enchiladas, or over grilled meats and roasted potatoes for lunch or dinner. It is best when it is fresh or used within one day of being made. This recipe comes from Sandy Szwarc's "Real New Mexico Chile".

NEW MEXICO GREEN CHILE MEATLOAF

New Mexico Green Chile Meatloaf image

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

NEW MEXICO RED CHILE SAUCE

New Mexico Red Chile Sauce image

Red chile is a staple of the New Mexican and West Texan diet, and this recipe is my grandmother's recipe. When I make it, it reminds me of the smells of her cooking in her kitchen, fresh corn tortillas, beans, and red chile peppers. You can kick up the spiciness by adding more arbol chile pods.

Yield 4

Number Of Ingredients 10

2 tablespoons canola oil
20 New Mexico dried red chile pods, stemmed and seeded
10 dried chile de arbol peppers, stemmed and seeded

NEW MEXICO GREEN CHILE SAUCE

New Mexico Green Chile Sauce image

This is a versatile green Chile sauce that can be used for just about anything calling for a green sauce. I prefer using Hatch Big Jim Green Chile Peppers because of the flavor and medium heat. The heat index can be raised or lowered depending on the Chile peppers used. If you already have roasted and chopped green chilies skip the first 4 directions.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

6 ounces chili peppers, halved and seeded
3 tablespoons corn oil
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon salt

Steps:

  • Set oven rack 6 inches from the heat source and preheat oven's broiler.
  • Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil in the preheated oven until the skin is heavily blistered and turning black, about 4 minutes.
  • Transfer chile peppers to a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 15 minutes. Peel and chop the chile peppers.
  • Heat oil in saucepan over medium heat. Add onion; cook and stir until browned, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Stir in flour until mixture thickens. Stir in chopped chile peppers, beef broth, and salt. Bring to a boil; reduce heat and simmer until flavors combine, about 10 minutes.

Tips:

  • Choose the right chiles. The best chiles for New Mexico green chile sauce are Anaheim chiles, also known as New Mexico chiles. They are mild in heat and have a slightly sweet flavor.
  • Roast the chiles properly. Roasting the chiles brings out their flavor and makes them easier to peel. You can roast the chiles in the oven, on a grill, or over an open flame.
  • Peel the chiles carefully. Once the chiles are roasted, you need to peel them. Be careful not to touch the seeds or ribs of the chiles, as they can be very hot.
  • Use a blender or food processor. Once the chiles are peeled, you can blend them or process them in a food processor until they are smooth.
  • Add other ingredients. In addition to chiles, New Mexico green chile sauce typically includes other ingredients such as tomatillos, onions, garlic, and cilantro. You can also add other spices, such as cumin and oregano, to taste.
  • Simmer the sauce. Once all of the ingredients are combined, bring the sauce to a simmer and let it cook for at least 30 minutes. This will allow the flavors to meld and develop.
  • Serve the sauce. New Mexico green chile sauce can be served as a dip, a condiment, or a main course. It is delicious with tacos, burritos, enchiladas, and other Mexican dishes.

Conclusion:

New Mexico green chile sauce is a delicious and versatile sauce that can be used in a variety of dishes. It is easy to make and can be tailored to your own taste. So next time you are looking for a new sauce to try, give New Mexico green chile sauce a try. You won't be disappointed!
