TRENCHIES...TRAILER TRASH ENCHILADAS

Trenchies...trailer Trash Enchiladas image

This is a VERY easy dish to create. I got this from a friend in California and it is a great "what are we having for dinner" solution as you can have all of the ingredients on hand most of the time. I swear the hardest part is cutting the chimi's out of the packaging. You can use any frozen burrito, but the best I have found is the chimichangas from either of the club stores.

Yield 4-6 serving(s)

Number Of Ingredients 5

6 burritos
16 ounces green enchilada sauce
12 ounces cream of chicken soup
1 cup low-fat sour cream
2 cups cheese

  • You can use the burritos frozen, but cooking time will be increased by 15-20 minutes. You can also used cream of whatever is in the pantry.
  • Mix enchilada sauce, sour cream and soup in bowl.
  • Put about half of sauce into the bottom of a pan sprayed with pam. You determine which size pan you have that this will work with, I use either glass or pampered chef --
  • Place burritos in a single layer, then cover with remaining sauce.
  • Cover with foil and bake at 350 for 20 minutes.
  • Spread cheese over top and place back in oven for 10 minutes.

Ultimate Cheesy Enchiladas image

Provided by Jeff Mauro, host of Sandwich King

Time 45m

Yield 8 servings

Number Of Ingredients 17

3/4 cup vegetable oil
3 tablespoons all-purpose flour
2 tablespoons ancho chile powder
1 tablespoon chipotle chile powder
2 teaspoons cocoa powder
2 teaspoons dried oregano
2 teaspoons garlic powder
1 teaspoon ground cumin
2 cups low-sodium chicken stock
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
12 yellow corn tortillas
16 ounces Chihuahua or Oaxaca cheese, shredded
4 ounces sharp Cheddar, shredded
4 ounces Monterey Jack cheese, shredded
1/4 cup pickled jalapenos
1/4 cup fresh cilantro, minced

Steps:

  • Heat 1/4 cup of the oil in a medium pot over medium heat. Add the flour and whisk until smooth. Add the ancho chile, chipotle chile, cocoa, oregano, garlic powder and cumin and cook, whisking frequently, until the mixture is thickened slightly and fragrant, about 5 minutes. Add the chicken stock, whisk until smooth and continue to cook until slightly thickened, 2 to 3 minutes. Add the vinegar and season with salt and pepper.
  • Heat the remaining 1/2 cup oil over medium heat in a large skillet until shimmering. Quickly fry each tortilla in the oil, about 5 seconds per side; let drain on paper towels.
  • Preheat the oven to 375 degrees F.
  • Mix the Chihuahua, Cheddar and Monterey Jack cheese together in a bowl. Ladle about a 1/2 cup of the sauce on the bottom of a 9-by-14-inch glass baking dish. Stuff each tortilla with about 1/4 cup of the cheese blend. Roll the tortillas tightly and place seam-side down in the baking dish in 2 identical rows of 6. Cover with the remaining sauce and top with the remaining cheese.
  • Bake until the cheese is bubbly and golden brown, 10 to 15 minutes. Garnish with the pickled jalapeno and fresh cilantro.

AUTHENTIC TEX-MEXICAN ENCHILADAS

Authentic Tex-Mexican Enchiladas image

Authentic enchilada recipe from San Antonio. The Enchilada Gravy recipe will make 3 quarts so use as much as you like then refrigerate or freeze the rest. Cook time includes time to make Enchilada Gravy and Chili con Carne. Prep time is the time to make the Enchiladas. Enchiladas can be frozen fully assembled then thawed and heated in the oven. This recipe looks complicated but it is so easy, just throw everything into two pots and simmer while rolling up the tortillas! Substitute store-bought enchilada sauce for the Tex-Mex lovers, the enchilada gravy is some heavy stuff!

Tips:

  • To make your enchiladas more flavorful, use a variety of cheeses. A good combination is a blend of cheddar, Monterey Jack, and mozzarella.
  • If you don't have any enchilada sauce, you can make your own by simmering a can of tomato sauce with some chili powder, cumin, and oregano.
  • For a crispy enchilada, fry the tortillas in hot oil before filling and rolling them.
  • If you're short on time, you can use store-bought tortillas instead of making your own.
  • To make your enchiladas more filling, add some cooked beans, rice, or vegetables to the filling.
  • Be sure to top your enchiladas with plenty of cheese before baking them. This will help them to brown and get crispy.
  • Serve your enchiladas with your favorite toppings, such as sour cream, guacamole, Pico de Gallo, or cilantro.

Conclusion:

Enchiladas are a delicious and versatile dish that can be made with a variety of ingredients. Whether you're using leftover chicken or ground beef, or you're making a vegetarian version with beans and vegetables, there's an enchilada recipe out there for everyone. So next time you're looking for a quick and easy meal, give enchiladas a try. You won't be disappointed!
