5 pounds chicken breast, diced
2 pounds onion, chopped
2 pounds celery

2 cups tomato paste
3 tablespoons parsley, chopped
4 ounces garlic, crushed

1 to 1 1/2 pounds kielbasa sausage, thinly sliced
Two 15.5-ounce cans black beans with juice
Two 8-ounce cans tomato sauce
One 4-ounce can green chiles
1 1/2 teaspoons onion powder
1/2 teaspoon Italian seasoning
2 medium carrots, shredded
Black pepper
3 cups chicken stock
1 cup wild rice
1 bay leaf
Hot sauce, to taste

Steps:

  • For the jambalaya: In a large stockpot or Dutch oven, cook the bacon until crisp and set aside. Cook the sausage in the bacon drippings until lightly browned. Stir in the black beans, tomato sauce, chiles, onion powder, Italian seasoning, carrots and some black pepper. Bring to a boil, then reduce the heat and simmer, covered, for 45 minutes. Stir occasionally.

12 ounces turkey kielbasa, sliced (sometimes I'll use the whole ring which is often 16oz)
1 onion, chopped
1 green pepper, chopped
1 celery rib, chopped
1 1/2 tablespoons cajun seasoning
1 bay leaf
1 (14 1/2 ounce) can stewed tomatoes
3 cups chicken broth
1 1/2 cups white rice

Steps:

  • Cook kielbases, onion, green pepper, and celery in a large, non-stick saucepan over medium-high heat for 5 minutes.
  • Add Cajun seasoning and bay leaf. Cook 5 minutes.
  • Add tomatoes and chicken broth.
  • Stir in rice and simmer, covered, 15 to 20 minutes until rice is tender.

1 teaspoon black pepper

4 andouille sausages, cooked and sliced
1 sweet onion, diced
2 stalks celery, diced
1 green pepper, diced
1 jalapeño, minced

2 bay leaves
1 lb shrimp, peeled and divided

Steps:

1 small red capsicum, seeded and cut into 2 cm pieces
2 cloves garlic, chopped
1 pinch dried thyme
1 1/2 tablespoons cajun seasoning
1 teaspoon cayenne pepper
1 1/2 cups long grain rice
2 tablespoons tomato paste
1 (425 g) can chopped tomatoes
1 1/2 cups chicken stock
1 cup dry white wine
500 g medium green shrimp, peeled and deveined tails intact
500 g mussels, scrubbed and beards removed
250 g fish fillets, cubed
1/2 cup coriander leaves
sea salt
pepper

Steps:

  • Heat the olive oil in a large flame proof pan with a lid.
