PINEAPPLE CASSEROLE

Sweet-and-salty pineapple casserole is a childhood favorite for many Southerners, and with good reason -- it is just as irresistible with a baked ham as it is on the Thanksgiving table. Here, we've given the classic side dish a few tweaks to make it truly memorable.

Categories     side-dish

Time 1h5m

Yield 10 to 12 servings

Number Of Ingredients 6

Two 20-ounce cans pineapple chunks, juice reserved
1/4 cup granulated sugar
1 tablespoon cornstarch
2 cups roughly crushed buttery crackers, such as Ritz (45 crackers; 1 1/2 sleeves)
2 cups grated sharp Cheddar
1 stick (8 tablespoons) unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain the pineapple juice into a liquid measuring cup; you should have 1 1/2 cups. Whisk in the sugar and cornstarch until the sugar dissolves. Spread the pineapple chunks in the bottom of a 13-by-9-inch baking dish and pour over the pineapple juice mixture, stirring to coat the chunks evenly.
  • In a large bowl, stir together the crushed crackers, cheese and butter, then sprinkle the topping evenly over the pineapple. Bake the casserole until the topping is golden brown, the cheese is melted and the pineapple is bubbling in the center of the dish, 35 to 40 minutes. Let the casserole cool for 5 minutes, then serve warm.

Time 35m

Yield 8 serving(s)

Number Of Ingredients 7

2 (20 ounce) cans crushed pineapple
5 tablespoons flour
1/2 cup white sugar
1 cup grated sharp cheddar cheese
1 1/2 cups Ritz cracker crumbs
1/2 cup butter, plus
1 teaspoon butter

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 2-quart casserole dish with 1 T. butter.
  • Drain pineapple.
  • Place crushed pineapple evenly along the bottom of prepared casserole dish.
  • Mix together the flour, sugar and cheese.
  • Sprinkle evenly on top of pineapple.
  • Cover with Ritz cracker crumbs.
  • Melt butter and pour over the top of cracker crumbs.
  • Bake for 30 minutes in preheated oven.

Tips:

  • Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well.
  • Grate the cheese yourself for the best texture. Pre-shredded cheese can be dry and crumbly.
  • Don't overcook the casserole. The cheese should be melted and bubbly, but the pineapple should still be slightly firm.
  • Serve the casserole immediately, while it's hot and bubbly. You can also make it ahead of time and reheat it before serving.

Conclusion:

Pineapple cheese casserole is a delicious and easy-to-make dish that's perfect for any occasion. It's a great way to use up leftover pineapple, and it's also a popular dish to serve at potlucks and picnics. If you're looking for a side dish that's both sweet and savory, pineapple cheese casserole is a great option.
