1 large egg yolk
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Mushroom Sauce:
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
12 ounces fresh shiitake mushrooms, stemmed, sliced
1/2 cup sliced shallots
1 3/4 cups chicken stock or canned low-salt chicken broth
1 tablespoon chopped fresh sage
3 cups coarsely chopped arugula
1/2 teaspoon (about) white truffle oil (optional)*

  • For gnocchi:
  • Preheat oven to 450°F. Pierce potatoes with fork. Bake until tender, about 1 hour. Cool slightly; cut potatoes in half and scoop pulp into large bowl. Mash potatoes well. 1/3 cup butter
1 cup 2% low-fat milk
2 tablespoons milk
1 cup all-purpose flour
4 large eggs
3 1/2 ounces gruyere cheese, grated
1/4 cup gruyere cheese, grated (for topping)

Steps:

  • TO MAKE MORNAY SAUCE: Melt butter in a medium saucepan. Add flour and stir for one minute. Add in 2 cups milk. Cook until thickened.
  • Whisk in 3/4 cream to thin sauce and add 1/3 cup grated Parmesan cheese. Season with salt and pepper.

1/4 lb cheddar cheese, freshly grated
1/2 lb ricotta cheese
1 cup romano cheese, freshly grated
2 eggs, beaten

3 tablespoons flour

  • For the gnocchi, pare and steam the potatoes until they are fork tender. Puree.

1 tablespoon vegetable oil
1 (6 ounce) can crabmeat
2 teaspoons fresh lemon juice
