TROPICAL MANGO AND PINEAPPLE PARADISE SALSA

Tropical Mango and Pineapple Paradise Salsa image

This is a delightfully fresh salsa with a slight kick, that is super tasty with jerk chicken, grilled seafood, quesadillas or warm corn chips (especially blue ones - the colors are fabulous together!). Plus, it is super easy to make! This salsa is fairly mild, although the onion does pack some punch. I like it this way as a contrast to more spicy Mexican or Caribbean dishes, and because it really allows the yummy fruit flavors to shine!! However, you can add some fresh jalapeno or other pepper if you want it more spicy.

Yield Makes 4 servings

Number Of Ingredients 17

Mango Salsa
2 mangoes, chopped
1 papaya, chopped
4 leaves fresh basil, chiffoned
1/4 cup onion, diced
1/4 teaspoon jalepeno, minced
1 teaspoon lime juice
salt and pepper to taste
Tropical Paradise Halibut
4 fresh Halibut steaks, 1-inch thick

3 tablespoons parsley
1 1/2 teaspoon granulated garlic (or 1 teaspoon garlic salt)
salt and pepper

Steps:

  • Preheat grill for medium heat. Adjust grate/rack height to between 3-4 inches from heat source. Oil the grill rack well to avoid the fish sticking to the rack. Toss all the ingredients for the Mango Salsa in a medium bowl and let sit for 15 minutes. Meanwhile, combine the bread crumbs, oregano, thyme, paprika, parsley, garlic and salt and pepper in a shallow dish. Dredge each halibut steak in the dry mixture. When all the steaks are breaded, grill the halibut for 5-7 minutes per side or until the fish flakes easily. Do not overcook or the fish will be dry! Top halibut with the mango salsa and serve.

Categories     Salsas

Time 35m

Number Of Ingredients 9

2 large mangos peeled pitted and diced
1 small papaya
1 small red onion diced
1 medium jalapeno seeds removed and finely diced
¼ bunch cilantro chopped
1 teaspoon cumin
3 tablespoons olive oil
1 large fresh lime juiced
1 teaspoon kosher salt

Steps:

  • 1. Combine the mango, papaya, onion, jalapeno, cilantro, Season with cumin, olive oil, lime juice and salt

Tips:

  • Select ripe mangoes: Choose mangoes that are slightly soft when pressed, with a deep yellow or orange color. Avoid mangoes that are too hard or have green patches, as they will be sour and less flavorful.
  • Use a variety of colors: To create a visually appealing salsa, use a mix of colorful ingredients. Red, orange, and yellow bell peppers, tomatoes, and red onion are all great choices.
  • Add some heat: If you like spicy salsa, add a jalapeño or serrano pepper. Be sure to remove the seeds and ribs before chopping, to control the heat level.
  • Use fresh herbs: Fresh cilantro, mint, or basil add a burst of flavor and freshness to the salsa. Chop them finely just before serving, to preserve their delicate flavor.
  • Let the salsa chill: For the best flavor, let the salsa chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and develop.

Conclusion:

Tropical mango salsa is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for adding a pop of flavor and freshness to tacos, burritos, grilled fish or chicken, or simply served as a dip with tortilla chips.
