3 cups cooked chickpeas, peeled (from 1 to 1 1/4 cup dry chickpeas or from quality canned chickpeas. See recipe notes for more instructions on cooking and peeling chickpeas)
1 to 2 garlic cloves, minced
3 to 4 ice cubes
1/3 cup (79 grams) tahini paste
½ tsp kosher salt
Juice of 1 lemon
Hot water (if needed)
Early Harvest Greek extra virgin olive oil
Sumac

Steps:

  • Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms.
  • While processor is running, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency.

AUTHENTIC MIDDLE EASTERN HUMMUS (CHUMMUS)

Authentic Middle Eastern Hummus (Chummus) image

Authentic chummus is very different and SO much tastier than its American counterpart. This chummus is creamy and delicate in taste rather than overpowered with garlic or thick and pasty. It is eaten warm, fresh, and as a whole meal spread out in a dish and drizzled with fresh olive oil. It is scooped up with pita, raw onion slices, or just a fork. Do NOT use canned chickpeas (garbanzo beans)!

AUTHENTIC KICKED-UP SYRIAN HUMMUS

Authentic Kicked-Up Syrian Hummus image

This hummus recipe was handed down to me by my Syrian grandmother. I took it and tweaked it just a touch, adding roasted garlic, making it my most-requested recipe. I finally made it for my grandma a few months ago and she said it was incredible. That was my Oscar moment :) Even people who don't like hummus love this recipe. And I'm modest too!

TRULY JORDANIAN HUMMUS

Truly Jordanian Hummus image

Having just moved back from Jordan, i had to perfect a recipe for hummus, the fast food of Jordan. I finally got the texture righ even while using canned chick peas. Two secrets- finding the right brand of chickpeas and adding some ice to the final mix for a smooth texture (this is the authentic trick i brought back with me ). Hummus restaurants use citric acid instead of lemon juice, but lemon juice is always available. I use storebought bottled lemon juice.

HUMMUS... SMOOTH & CREAMY

Hummus... Smooth & Creamy image

Forget those tubs in the supermarket, they never taste like the real thing. I always use Ziyad brand products for a more authentic middle eastern taste. The addition of the "tetbeleh" is how it is mainly made in the Jordan. In the mid east people enjoy this as a breakfast side, typically someone makes a run to the nearby falafel restaurant and brings back falafel, hommus and foul(fave beans) and serve with a side of green olives, white cheese and tea using our pita bread as our spoons, and there you have a middle eastern breakfast. In the U.S. it is served as a side dish for the most part, but in the middle east it is more a breakfast dish.

Tips:

  • Use dried chickpeas: Dried chickpeas are more flavorful and have a better texture than canned chickpeas. If you use dried chickpeas, soak them overnight in cold water before cooking them.
  • Cook the chickpeas until they are very soft: The chickpeas should be so soft that they can be easily mashed with a fork. This will ensure that your hummus is smooth and creamy.
  • Use a food processor or blender: A food processor or blender will help you to achieve a smooth and creamy hummus. If you don't have a food processor or blender, you can mash the chickpeas by hand, but this will take longer and the hummus may not be as smooth.
  • Add tahini paste: Tahini paste is a key ingredient in hummus. It adds a nutty flavor and a creamy texture. Make sure to use a good quality tahini paste that is made from 100% sesame seeds.
  • Season the hummus to taste: Hummus should be seasoned with salt, pepper, and cumin. You can also add other spices, such as paprika, garlic powder, or cayenne pepper, to taste.
  • Serve the hummus with pita bread, vegetables, or crackers: Hummus can be served as a dip with pita bread, vegetables, or crackers. It can also be used as a sandwich spread or as a topping for salads and bowls.

Conclusion:

Hummus is a delicious and versatile dish that can be enjoyed as a dip, spread, or topping. It is a good source of protein, fiber, and healthy fats. By following these tips, you can make a delicious and authentic hummus at home.
