1/4 cup minced fresh cilantro
1/4 cup sesame oil
3 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons extra virgin olive oil

SALAD:
1 package (5 ounces) fresh baby spinach
1 medium sweet yellow pepper, cut into 1-in. pieces

1 teaspoon chili powder
½ teaspoon salt

1 ½ cups egg noodles
1 ¼ cups shredded sharp Cheddar cheese
1 (5 ounce) can tuna, drained

Steps:

  • Cook noodles in a pot of boiling water until done. Drain.

1 each red, yellow and green bell peppers, stemmed, seeded, deribbed and cut into 1-inch squares
1 medium red onion, peeled and cut into 1-inch squares
4 tablespoons fresh lemon juice
2 cups basil, coarsely chopped

8 cups stemmed spinach, washed but not dried
2 cups cooked white rice
