1 pound lean ground turkey
1 medium green pepper, chopped
1 medium onion, chopped
1-1/2 teaspoons garlic powder
1-1/2 teaspoons ground cumin
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) stewed tomatoes, undrained
1-1/2 cups salsa
1 can (15 ounces) black beans, rinsed and drained
8 corn tortillas (6 inches)
2 cups shredded reduced-fat Mexican cheese blend, divided
Optional: Shredded lettuce, chopped tomatoes, plain Greek yogurt and chopped fresh cilantro

Steps:

  • Cook the turkey, pepper, onion and spices in a large skillet over medium heat until meat is no longer pink. Stir in the tomato sauce, stewed tomatoes and salsa; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, breaking up tomatoes with the back of a spoon. Stir in beans; heat through., Spread 1 cup meat mixture into a greased 13x9-in. baking dish. Top with 4 tortillas. Spread with half the remaining meat mixture; sprinkle with 1 cup cheese. Layer with remaining tortillas and meat mixture., Cover and bake at 350° for 20 minutes. Sprinkle with remaining cheese. Bake, uncovered, until bubbly and cheese is melted, 5-10 minutes longer. Let stand for 10 minutes. If desired, serve with toppings. Freeze Option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. If desired, serve with toppings.

2 cups cubed cooked turkey or chicken
2 cups frozen cut green beans, (from 1-lb bag)
1 can (10 3/4 oz) condensed cream of mushroom soup
1 cup milk
1 3/4 cups water
3 tablespoons butter or margarine
1/2 teaspoon salt
2 cups plain mashed potato mix (dry)
1 cup shredded Cheddar cheese (4 oz)
1/2 can (2.8 oz) french fried onions (1/2 cup)

Steps:

  • Heat oven to 375°F. In 2-quart saucepan, mix turkey, green beans, soup and 1/3 cup of the milk. Cook over medium heat 6 to 8 minutes, stirring occasionally, until mixture is hot.
  • Make mashed potatoes in microwave as directed on box using water, remaining 2/3 cup milk, butter, salt and mashed potato mix.
  • Remove turkey mixture from heat. Stir in cheese until melted. Pour into ungreased 2-quart casserole. Top with mashed potatoes.

1 lb ground turkey
1/2 stalk celery
1/2-1 cup shredded spinach
16 ounces fat-free refried beans
16 -20 ounces jar salsa
1 ounce taco seasoning mix
3/4 cup green bell pepper (chopped)
1/2 jalapeno pepper (seeded, and chopped fine)
1/4 cup sliced green onion
1 1/2 cups diced tomatoes
1 cup of shredded cheese (I like Cheddar)
3 cups shredded lettuce

Steps:

  • Brown the turkey.
  • Add the celery and peppers and cook until tender.
  • Mix in the spinach, beans, salsa, and taco mix and simmer 15 minute
  • Pour into a casserole and top with green onions, half the tomatoes, and cheese. Bake at 350 for 20-30 minute.

350 g dried haricot beans
2 small carrots, cut into chunks
2 large onions, sliced
1 bouquet garni
1 tablespoon olive oil
2 medium red chilies, deseeded and chopped
2 cloves garlic, crushed
350 g lean turkey meat, chopped
2 large sweet peppers
2 courgettes, finely diced
400 g chopped tomatoes
1 tablespoon sun-dried tomato paste
fresh basil leaf

Steps:

  • Soak beans overnight in plenty of cold water.
  • Drain then put into a large pot and cover with fresh water.
  • Add the carrots, half the onion and the bouquet garni.
  • Bring to a boil, cover, reduce the heat and simmer for 45 minutes until the beans are tender.
  • Drain, reserving the beans and 150ml or 1/4 pint of the cooking water.
  • Discard the vegetables.
  • Heat the oil in the pot and cook the rest of the onion for 5 minutes.
  • Add the chilli and garlic and cook for a further minute until softened.
  • Add the turkey and fry for five minutes, then add the peppers and courgettes.
  • Season well, cover and cook for five minutes until the vegetables are slightly softened.
  • Add the tomatoes and tomato paste.
  • Cover and bring to a boil.
  • Add the beans and the reserved cooking liquid.
  • Season again, then cover and simmer for 15 minutes.
  • Ladle into bowls and garnish with basil leaves.

1 habanero chile, stemmed, seeded and minced
1 28 oz can fire roasted diced tomatoes
2 T blackstrap molasses
1 7 1/2 oz bag of blue corn chips, finely crushed

Steps:

  • Preheat oven to 425F. In a large pot over medium flame, heat the oil. Add the onion, chiles and turkey, and saute for 5 minutes. Stir in the tomato paste, and cook for 1 minute longer. Add remaining ingredients except the chips, and stir well to combine. Cover, and cook over high heat for 5 minutes. Spoon mixture into a casserole dish, and bake in the oven for 20 minutes. Remove from oven, sprinkle crushed chips evenly over the top of the casserole and serve
