Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 12

1 lb ground turkey
1/2 stalk celery
1/2-1 cup shredded spinach
16 ounces fat-free refried beans
16 -20 ounces jar salsa
1 ounce taco seasoning mix
3/4 cup green bell pepper (chopped)
1/2 jalapeno pepper (seeded, and chopped fine)
1/4 cup sliced green onion
1 1/2 cups diced tomatoes
1 cup of shredded cheese (I like Cheddar)
3 cups shredded lettuce

Steps:

  • Brown the turkey.
  • Add the celery and peppers and cook until tender.
  • Mix in the spinach, beans, salsa, and taco mix and simmer 15 minute
  • Pour into a casserole and top with green onions, half the tomatoes, and cheese. Bake at 350 for 20-30 minute.
  • Add remaining ingredients over the top and serve with chips, or on tortillas.

Tips:

  • For a vegetarian or vegan taco soup, use vegetable broth instead of chicken broth and omit the ground turkey.
  • If you like your soup spicy, add a diced jalapeño pepper or a teaspoon of chili powder.
  • For a thicker soup, mash some of the beans with a fork before adding them to the pot.
  • Serve the soup with your favorite taco toppings, such as shredded cheese, sour cream, guacamole, and salsa.
  • Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.

Conclusion:

This easy turkey bean taco soup is a delicious and versatile meal that can be tailored to your own taste preferences. It's perfect for a quick and easy weeknight dinner or a hearty lunch. Serve it with your favorite taco toppings and enjoy!
