¾ pound ground turkey
¾ pound lean ground beef
1 small onion, chopped
1 cup milk
1 cup seasoned bread crumbs
1 large egg
1 teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared yellow mustard

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch loaf pan with cooking spray.
  • Combine ground turkey, ground beef, onion, milk, bread crumbs, egg, rosemary, salt, and pepper in a mixing bowl. Press into the prepared pan.

1 cup fresh or frozen cranberries, thawed
2 tablespoons ketchup
1 tablespoon honey
1 tablespoon sriracha
2 1/2 teaspoons Dijon mustard
2 sprigs fresh rosemary, leaves finely chopped (2 tablespoons), plus more sprigs for garnish
Kosher salt and freshly ground black pepper
1 small carrot
1 small onion
1 pound 90 percent lean ground beef
8 ounces 85 percent lean ground turkey
1 large egg
1/2 cup instant barley
2 teaspoons Worcestershire sauce
Freshly ground black pepper

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
  • Put the cranberries, ketchup, honey, sriracha, 1/2 cup water and 1/2 teaspoon of the mustard in a small saucepan and stir to combine. Heat over medium-high heat until the mixture starts to bubble, then reduce to a simmer and cook, stirring occasionally, until the mixture thickens and the cranberries soften, about 10 minutes. Use a potato masher to crush the cranberries until mostly smooth. Add the rosemary and 1/4 teaspoon salt and set aside to cool slightly.
  • Grate the carrot and onion on the small shredding side of a box grater into a large bowl. (This will save any onion liquid, which will help keep the meatloaf moist.) Add the beef, turkey, egg, barley, Worcestershire, remaining 2 teaspoons of the mustard, 1 teaspoon salt and several grinds of pepper. Use your hands to mix everything together until well combined.
  • Transfer the mixture to the prepared baking sheet and shape into a 9-by-4-inch loaf using your hands. Brush the meatloaf on all sides with half of the cranberry glaze. Bake until the glaze starts to adhere and dry slightly, about 15 minutes. Brush the meatloaf on all sides with the remaining glaze and bake until a thermometer inserted into the center of the meatloaf registers 155 degrees F, 30 to 35 minutes. This is dinner party fare. Looks like it stepped from a food magazine. Easy to make. All ingredients can be made ahead, then chilled & baked. If chilled allow 10 minutes more baking time. Make sure mashed potatoes are room temperature before frosting.

2 lbs lean ground beef or 2 lbs ground turkey
1 tablespoon A.1. Original Sauce
1/2 cup minced onion
1 teaspoon dried cilantro
2 eggs, beaten
1 cup crushed saltine crackers or 1 cup dry breadcrumbs
1/2 cup Catalina dressing
1/2 teaspoon white pepper
1 1/2 cups shredded cheddar cheese or 1 1/2 cups shredded colby cheese
2 cups hot mashed potatoes (3 medium potatoes boiled)
1 egg, beaten
1/2 cup Miracle Whip
1/2 teaspoon salt or 1/2 teaspoon salt substitute
paprika
1 lb broiled mushroom

Steps:

  • In large bowl mix ground meat and A-1 sauce, minced onion, cilantro. Add beaten eggs, mix well. Add crackers or bread crumbs and catalina dressing and white pepper. Mix. Add cheese 1/2 cup at a time and mix, then add another until all cheese is mixed.
  • Form into an oval loaf, place in low side baking pan. Chill if desired.
  • Bake 350* 1 hour. Allow ten more minutes if chilled. I suggest placing a pan on the rack underneath to catch any grease drips from beef or turkey and the melted cheese sometimes drips from the bottom side. I have used a sharp cheese also. When cold this makes an excellent cold meat loaf sandwich. Some family members prefer cold.
  • Cook 3 medium potatoes in water or microwave, peel and mash. Add beaten egg and miracle whip and salt. You may prepare instant potatoes if you desire. Make sure they are a little on the stiff side before adding the egg, miracle whip and salt.
  • When loaf is baked, frost with mashed potatoes. Spread on with spatula. Make peaks all over it.You can also brush melted margarine over it but watch carefully when it is broiling.
  • Broil about 5 inches away until peaks are browned. Take out of oven. Sprinkle with paprika if desired. Broil fresh mushrooms at the same time.
  • Let set ten minutes before serving. Cut in wedges. Serve on a platter with broiled fresh mushrooms surrounding the loaf and slices of lemon in between.
