This flavorful, light and fiber-rich chili is a nice alternative to grilled food on a hot night. Make it in the morning when it is cool outside or cook it right before serving. I serve it with brown rice mixed with fresh cilantro, a dollop of low fat sour cream and baked tortilla chips.

An answer to leftover turkey, this chili makes a good buffet dish for your winter football get-togethers. You may use green chilies in place of poblano chilies; however, the flavor and color of poblano chilies are superior. From The Ultimate Low-Fat Mexican Cookbook by Anne Lindsay Greer.

TURKEY BLACK BEAN CHILI
Steps:
- 1. In a large pot, heat 1 tbsp. of olive oil over medium-high heat. Once hot, add ground turkey. Salt and pepper liberally, brown until cooked through. Remove cooked turkey from pot and place on a plate with several paper towels to drain excess fat. 2. In the same pot, heat 1 tbsp. of olive oil and add chopped onion, green pepper, jalapeno and celery over medium-high heat. Cooked until onion is translucent, add garlic. Cook for an additional minute, add back ground turkey. Mix in the chili powder, Mexican chili powder and cumin. 3. Stir in tomatoes, black beans and broth. Reduce heat to medium-low, so the chili cooks at steady simmer for 2 1/2 - 3 hours. 4. 30 minutes prior to serving chili, saute freshly-cut corn in a pan over medium-high heat for 3 - 5 minutes. Add corn to chili. Add additional salt/pepper if needed. 5. Serve hot topped with toppings of choice! I prefer freshly-grated cheddar and sour cream.
Tips:
- Use a variety of beans: Black beans are the traditional choice for chili, but you can also use other beans, such as kidney beans, pinto beans, or navy beans. This will add a variety of flavors and textures to your chili.
- Don't be afraid to experiment with different spices: Chili is a great dish to experiment with different spices. You can add cumin, chili powder, paprika, oregano, or any other spices that you like. Be sure to taste your chili as you go and adjust the spices accordingly.
- Let your chili simmer for a long time: The longer your chili simmers, the better the flavors will develop. Aim to simmer your chili for at least 2 hours, or even longer if you have the time.
- Serve your chili with your favorite toppings: There are many different toppings that you can serve with chili, such as sour cream, cheese, avocado, or cilantro. Choose your favorite toppings and enjoy!
