This dish is SO easy to make and comes together in a snap! The original recipe called for chicken and apricot, but I switched out turkey and berry jam to use up some Thanksgiving leftovers. 4 turkey breast tenderloins (12 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
1/4 cup chicken broth
SAUCE:
1 tablespoon olive oil
5 shallots, thinly sliced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chicken broth
1/4 cup balsamic vinegar
3 tablespoons seedless raspberry jam

Steps:

  • Sprinkle turkey with salt and pepper. In a large skillet, heat oil over medium heat; brown tenderloins in batches. Cook, covered, until a thermometer inserted in pork reads 165°, 8-10 minutes longer. Remove from pan; keep warm., Add broth to skillet; increase heat to medium-high. Cook, stirring to loosen browned bits from pan; remove from heat., Meanwhile, in another skillet, heat oil over medium-high heat. Add shallots, salt and pepper; cook and stir until shallots are tender. Add broth, stirring to loosen browned bits from pan. Stir in vinegar and jam. Bring to a boil; cook until slightly thickened, 4-5 minutes, stirring occasionally., Slice tenderloins; drizzle with pan juices. Serve with berry sauce.

2 turkey breast tenderloins (5 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons olive oil
1 teaspoon cornstarch
1/4 cup cranberry-raspberry juice
2 tablespoons Heinz 57 steak sauce
2 tablespoons red raspberry preserves
1/2 teaspoon lemon juice

Steps:

  • Sprinkle turkey with salt and pepper. In a large nonstick skillet over medium heat, brown turkey in oil on all sides. Cover and cook until a thermometer reads 165°, 10-12 minutes. 1 pound turkey tenderloins
3 tablespoons soy sauce
1 tablespoon Dijon-style prepared mustard
2 teaspoons dried rosemary, crushed

Steps:

  • Place the turkey tenderloins in a sealable plastic bag and set aside.
  • In a small bowl combine the soy sauce, mustard and rosemary. Pour over turkey, seal bag and shake to coat. Marinate in the refrigerator for 1 to 4 hours shaking once or twice.
  • Preheat oven on the broiler setting. Remove the turkey from the marinade and place on the rack in the broiler pan. Broil 4 inches from the heat, turning once, for 20 to 22 minutes or until meat is cooked through and when pierced with a fork the juices run clear. Slice and serve with Cranberry Chutney.
