½ small onion, diced

1 (16 ounce) container fat-free sour cream
¾ cup shredded reduced-fat Cheddar cheese
6 (10 inch) flour tortillas

Steps:

  • In a large skillet over medium high heat, brown ground turkey. Stir in tomato sauce, corn and onion. Reduce heat to medium and let simmer, stirring occasionally, until liquids reduce (about 20 minutes).
  • In a separate medium skillet, heat beans over medium-low heat. Prepare sour cream and cheese for sprinkling into burritos. One by one, heat tortillas over stove burner for 1 to 2 minutes, flipping a few times. Top with beans, then meat mixture, then sour cream and cheese. Fold over and serve while still warm.

1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (16 ounces) refried beans with green chilies
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1 envelope taco seasoning
1/4 cup frozen corn
1/4 cup uncooked instant rice
10 to 12 flour tortillas (7 to 8 inches)
Shredded cheddar or Monterey Jack cheese, optional

Steps:

  • In a large nonstick saucepan, brown turkey and onion; drain. Add tomatoes, beans, chilies, olives, taco seasoning and corn; bring to a boil. Reduce heat; cover and simmer for 15 minutes. 1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)

Steps:

3/4 cup purchased fresh fire-roasted salsa
1 tablespoon ground cumin
1 8-ounce package grated Mexican 4-cheese blend (about 2 cups)
3/4 cup chopped fresh cilantro
6 burrito-size flour tortillas

Steps:

  • Preheat oven to 300°F. Heat oil in large nonstick skillet over medium-high heat. Add onions and bell peppers; sauté until tender and golden, about 15 minutes. Add turkey, salsa, and cumin; stir until heated through, about 5 minutes. Stir in cheese and cilantro; season generously with salt and pepper. Remove from heat; cover to keep warm.

1/2 lb turkey meat, white and dark meat shredded
1/2 onion, finely chopped
1 garlic clove, smashed and minced
1 tablespoon chili powder
1/2 tablespoon kosher salt
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon crushed red pepper flakes
1/4 cup lime juice
1 tablespoon gold tequila
2 tablespoons canola oil
1/2 cup monterey jack pepper cheese
4 flour tortillas

Steps:

  • Combine turkey, tequila, lime juice, onion, garlic and 1 tbsp oil in a medium bowl.
  • Add salt, garlic and onion powder, black and red pepper, cumin, and chili powder to turkey mixture and stir until everything is well coated.
  • Cover and let sit in the refrigerator for no more than 1 hour.
  • Heat 1 tbsp canola oil in skillet over medium heat.
  • Wrap tortillas in foil and let heat in 300 degree oven for about 10 minutes.
  • Add turkey mixture to skillet and cook until onions are soft and mixture is thoroughly heated through(about 10 minutes).
  • Remove tortillas from the oven and sprinkle pepper-jack cheese down the middle of each tortilla.

  • 2 add Cayenne, and cumin mix well.
  • N.B. add water if appears to dry.

1 cooked chicken breasts or 1 equivalent turkey
15 ounces refried beans
1/4 cup taco sauce
7 (7 inch) flour tortillas
15 ounces green enchilada sauce
6 ounces low-fat cheddar cheese, shredded (Kraft's Mexican cheese mix is good)
1/4 cup low-fat sour cream

Steps:

  • Remove skin from chicken or turkey if it's there. Shred into bite-sized pieces.
  • If you are using canned refried beans, mix them with the taco sauce. You can use salsa too. The point is to loosen up the beans a little.
  • Lay out tortillas. In each one, put some beans and chicken. Roll up in normal burrito fashion. As each tortilla is rolled up, put in a pan.
  • When finished filling and rolling tortillas, pour enchilada sauce over them.
  • Cover top with cheese.
  • Bake at 350 for 30 minutes. Top with sour cream.

1 cup uncooked brown rice
1 head red cabbage
¼ cup olive oil
½ red onion, chopped
1 stalk celery, finely chopped
1 clove garlic, minced
1 pound ground turkey

12 (10 inch) flour tortillas

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Cut off the stem of the red cabbage. Peel leaves off gently, being careful not to tear. Place individual leaves gently into a large pot of water and bring to a boil. Cook for 5 minutes; reduce heat and simmer until tender but still crunchy and red, 8 to 10 minutes more. Drain.
  • Heat olive oil in a large skillet over medium-high heat. Saute onion, celery, and garlic until softened, 5 to 7 minutes. Mix in turkey meat and season with salt. 2 tablespoons vegetable oil
1 1/3 lbs ground turkey breast
1 large onion, chopped

1 (15 ounce) can pinto beans, rinsed and drained

  • Preheat oven to 275°; wrap flour tortillas in foil and warm in the oven.
  • Preheat a large nonstick skillet with the vegetable oil.

I used ground Chuck & mixed it with ground turkey. It is a simple meal, but the hardest part is all of the chopping of the veggies, which really isn't hard just a little...

2 lb ground chuck
1 lb lean ground turkey
2 pkg taco seasoning mix (or seasoning of your choice)
4 medium tomatoes, chopped
1/2 head lettuce, shredded finely
8 oz finely shredded mexican cheese
1 medium red onion,chopped or use green or what ever you prefer
2 pkg large burritos (6 pk)
3 can(s) refried beans
salsa, chunky (your choice)
sour cream ( i prefer daisy brand)

Steps:

  • 1. Combine Beef & Turkey in a large skillet.
  • 2. Cook over medium high heat. Break up meat chunks as it cooks with a wooden spoon. When meat is fully cooked. Set a large colander over a large bowl, then drain meat into colander over the bowl to catch the excess fat.
  • 3. Then pour meat back int skillet and add the taco seasoning, or which ever seasoning you are using along with 3/4 cups of water, then allow meat to simmer till liquid has been absorbed.
  • 4. Prep and chop all the vegetables that will be used. Lettuce, tomatoes, onions, salsa, sour cream,cheese. I like to put all ingredients on a large platter. WE DO NOT CARE FOR CILANTRO, that is why none is used, but if you like it, by all means use it.
  • 5. Heat beans, either in skillet or microwave. When heated you will then be ready to assemble your burritos.
  • 6. Add one large flour tortilla to a flat surface, I used a large pizza pan. Then spread bean mixture on 1/2 side of tortilla, leaving the other side plain and empty.
  • 7. Next Add Ground Beef
  • 8. Then add Tomatoes
  • 9. Add chopped onions
  • 10. Add shredded cheese.
  • 11. Add salsa & sour cream,
  • 12. Top with shredded lettuce.
  • 13. Then with the bottom end that is closest to you, pull bottom portion of burrito up and over all the filling mixture,being careful not to tear the bread. Then wrap as tightly as you can.
  • 14. Until you have a COMPLETE ROLL.
  • 15. With a serrated knife cut burrito on an angle and in HALF, MAKING IT MUCH EASIER TO GRASP & EAT. SERVE WITH YOUR FAVORITE SIDE ITEMS. Please note you can assemble your burrito any way you like, I just put all the ingredients inside the sandwich, instead of some on the side. Enjoy, and this is so tasty and filling.
