2 tablespoons butter
3 tablespoons all-purpose flour
½ cup milk
½ cup chicken broth
2 cups diced cooked turkey
1 tablespoon chopped fresh parsley

1 egg, beaten

Steps:

  • Place bread in a blender and blend until soft crumbs form. Place bread crumbs in a shallow bowl.
  • Heat butter in a saucepan over medium heat until melted. Stir flour into melted butter until dissolved. Mix milk and broth into butter-flour mixture; cook and stir until mixture is thick, about 5 minutes. Remove saucepan from heat and cool mixture.

2 to 2 1/2 cups bread crumbs
1 large egg
2 tablespoons water
2 cups mashed potatoes
2 cups stuffing
2 cups chopped cooked turkey or rotisserie chicken
4 to 6 tablespoons olive oil, as needed

Warm turkey gravy
Equipment: 1 large rimmed baking sheet

Steps:

  • In a small sauté pan over moderate heat, toast the bread crumbs until golden and crunchy, 3 to 4 minutes. Transfer to a small bowl and let cool.
  • In a small bowl, beat together the egg and water.

1/4 small red bell pepper, chopped
1 cup cooked, chopped turkey meat, white and dark
1 cup leftover mashed potatoes
1 egg
Salt and pepper
2 teaspoons poultry seasoning
Few sprigs parsley, leaves only
1 cup Italian bread crumbs
3 tablespoons butter
4 tablespoons extra-virgin olive oil
12 cremini mushrooms, thinly sliced
3 to 4 sprigs fresh rosemary, finely chopped
2 tablespoons all-purpose flour
3 cups chicken stock
1/2 cup grated Romano, a couple of handfuls

  • Place the garlic, onion, celery and red bell pepper in food processor and pulse to fine chop. 1 cup beans, puree (this could be made from any canned bean to suit your taste, refried beans work well)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/3 teaspoon pepper
1 medium onion, minced fine
1 garlic clove, minced fine
1/2 cup parsley, minced
1/4 cup sage, minced (or 1 tsp dried, crumbled)
1/2 cup buttermilk
1 egg
2/3 cup flour
2 tablespoons olive oil
1 lb button mushroom, thinly sliced
2 garlic cloves, minced
12 ounces half-and-half cream
1/4 cup parsley, minced
buttered rice or noodles

Steps:

  • For croquettes: In a large bowl, add all of croquette ingredients and combine to distribute ingredients thoroughly; refrigerate for 30 minutes (or longer) before using.
  • Heat 2 tblsps olive oil in a large non-stick skillet over medium heat.
  • Using a tablespoon (dipped in water), scoop out rounded spoonfuls of the croquette mixture and, using another spoon, push the mixture into the hot skillet; continue until you have filled the skillet with turkey croquettes; fry croquettes 5-6 minutes per side, until dark golden-brown; you may need to reduce heat slightly; remove as they are done to a glass baking dish; you will need to fry up in about 2 batches (maybe just into a third, depending on how big your skillet is); keep croquettes warm in a preheated oven while you make up the sauce.
  • For creamy-mushroom sauce: Increase heat under skillet used for cooking croquettes (do not clean it out in any way!) to medium-high and add the sliced mushrooms (do no add any more fat); allow the mushrooms to release some of their liquid and stir up tasty browned bits that are left in the pan from cooking the croquettes; add garlic and sauté mushrooms, stirring occasionally, until all the liquid they have let off has evaporated, about 9-10 minutes; add cream and cook until cream has thickened, about 10 minutes; pour sauce over turkey croquettes, sprinkle with minced fresh parsley and serve with hot buttered rice or noodles; this will make just enough sauce to coat croquettes; if you like loads of sauce, use more mushrooms and cream.

1/8 teaspoon cayenne
an egg wash made by beating lightly 2 large eggs with 1 tablespoon water
1 1/2 cups fine fresh bread crumbs
For the salsa
1/2 cup finely chopped picked-over fresh cranberries
3/4 cup finely chopped Granny Smith apple tossed with 1 tablespoon lemon juice
1 tablespoon honey
2 scallions, chopped fine

2 fresh jalapeño or serrano chilies, or to taste, seeded and minced (wear rubber gloves)

  • Make the croquettes:
  • In a small saucepan cook the onion in the butter over moderately low heat, stirring, for 5 minutes, stir in 1/4 cup of the flour, and cook the roux mixture over low heat, stirring, for 3 minutes. Stir in the milk and the broth, cook the mixture, stirring, until it forms a paste, and cook the paste, stirring, for 3 minutes. Remove the pan from the heat, stir in the turkey, the sweet potatoes, the cayenne, and salt and black pepper to taste, and combine the mixture well. Chill the turkey mixture, covered, for 2 hours, or until it is firm, and roll level tablespoons of it into balls. Dredge the balls in the additional 1/2 cup flour, shaking off the excess, coat them thoroughly with the egg wash, letting the excess drip off, and dredge them in the bread crumbs, transferring them to wax paper as they are coated. The croquettes may be made up to this point 1 month in advance and kept wrapped well and frozen. Thaw the croquettes for 1 hour. If serving the croquettes immediately, let them dry at room temperature for 1 hour.
  • Make the salsa while the croquettes are thawing or drying:
  • In a small bowl combine well the cranberries, the apple, the honey, the scallions, the raisins, the chilies, and salt to taste and chill the salsa, covered, for 1 hour.
  • In a large saucepan heat 2 inches of the oil until a deep-fat thermometer registers 365°F., in it fry the croquettes in batches for 1 to 1 1/2 minutes, or until they are golden brown, and transfer them with a slotted spoon to paper towels to drain. Serve the croquettes with the salsa.

1 c stuffing (holiday leftovers)
1 stalk(s) celery, diced
2 small green onions, finely chopped
1 c cauliflower & broccoli florettes, green bean casserole or corn
1 large egg
1 - 1 1/2 c cracker crumbs *I used Cheeze-Its*
pinch salt and pepper
1 c French fried onions or crackers, crushed

  • 1. Using a food processor, chopper or Bullet finely chop meat, celery, onion, cauliflower, and broccoli.
  • 2. Stir in stuffing and 1c crushed cracker crumbs. *I used Cheeze-Its & saltines but any flavor of crackers would work.
  • 3. Whisk egg well and add to mixture along with a pinch of salt and pepper. *This makes a good binder for the patties*
  • 4. Take a scoop of the mixture and roll into a ball that sticks together (add more cracker crumbs if it's not holding together well). Press ball into patties the size of a standard burger bun in diameter.
  • 5. Dredge patties in crushed French fried onion or remaining cracker crumbs if desired.
  • 6. Heat a skillet to medium heat and use 2 tbsp olive oil fry the patties for 3-5 minutes on each size until golden brown.

  • refrigerate for 30 minutes until firm form into 12 patties, dredge in remaining panko.
  • heat half the oil in a saute pan, add 6 patties and cook 3-5 minutes per side repeat serve with cranberry sauce or leftover turkey gravy.

3/4 lb thick sliced turkey from the deli (great if you have left over turkey)
8-10 slice bread
1/4 c chopped onion
3 Tbsp butter
1/2-1 tsp poultry seasoning
1 jar(s) turkey gravy
1/4-1/2 c water
1/2 c bread crumbs
1/4 c club crackers, crushed
1/2 c chicken breading mix ( i use martha washington)

Steps:

  • 1. Melt butter in pan over med low heat, add onion and saute til soft, add 3 tblspn of the gravy and the waterand 1/4 tsp of poultry seasoning and simmer.
  • 2. Break bread up into pieces and mix rest of poultry seasoning, add 1/4 of chicken breading mix. Mix the turkey in the bread add the onion mixture and mix together.
  • 3. In a med size bowl add bread crumbs, chicken breading mix and crushed crackers. Use an ice cream scoop and scoop a ball of turkey croquette mix and roll until ball is covered. Take the croquettes and refrigerate 1/2 hr. (I like to put mine in the freezer for an hour or so)
  • 4. Preheat oven to 350, bake on a greased cookie sheet for 30 minutes until golden and crispy. Heat the rest of gravy to serve with the croquettes.

4 c turkey, shredded and chopped
1 1/2 c cracker crumbs, crushed
1/4 c onion, chopped
1/4 c celery, chopped
1/4 c mayo
2-3 eggs
salt and pepper to taste
olive oil
hamburger buns, opt

Steps:

  • 1. Shred or chop turkey. Add cracker crumbs, (start with 1 c. add more if needed), chopped onion and celery, black pepper & salt if desired. Mix together, add mayo and eggs. (Start with 2 eggs, if it's too dry add the third one). Mix well to combine all ingredients.
  • 2. Form into oval patties and fry in a little olive oil till nice and brown. Serve as a main dish or on a sandwich!

3 Tbsp butter
1/4 c onions, finely chopped
1/4 c celery, finely chopped
1/2 c button mushrooms, washed and finely chopped
5 Tbsp unbleached all-purpose flour
1 c half-and-half
1/4 tsp poultry seasoning
1/4 tsp hot paprika
1/4 tsp ground himalayan sea salt
freshly ground black pepper, to taste and divided (i always use mixed peppercorns)
1 c cooked turkey, finely chopped
1/2 Tbsp fresh parsley, chopped
3 1/2 c canola oil or as needed, for frying
1 c panko breadcrumbs, ground
1 large free-run egg, lightly beaten
2 Tbsp milk

Steps:

  • 1. In a saucepan over medium-heat, add butter and when sizzling, add onion and celery; sauté for 1 minute. Add mushrooms and sauté for 2 minutes. Add flour and cook for 1 minute, stirring constantly. Pour in milk, add poultry seasoning, hot paprika, salt, and freshly ground black pepper; stir well and cook until the sauce thickens about 1 minute. Turn off the heat and add turkey and parsley; stir well. Transfer to a bowl and let cool off for 5 minutes before covering and chilling for 5 hours.
  • 2. In a pot over medium heat, add oil and bring to 365ºF. Meanwhile, divide turkey mixture into 8 balls; set aside.
  • 3. In a shallow plate, add breadcrumbs and season with black pepper; stir to mix. In another shallow plate, combine egg with milk; beat well. Roll each croquette into breadcrumbs then egg mixture and again in breadcrumbs.
  • 4. Working in batches, carefully place them in hot oil and fry for 3 minutes or until golden brown. Transfer them to a plate lined with paper towels to absorb any excess oil. Serve with gravy or cranberry sauce along with mashed potatoes and veggies. Makes 8 croquettes
