Yield 12 muffins

Number Of Ingredients 18

nonstick cooking spray, for greasing
2 cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon black pepper
1 pinch sugar
3 large eggs
1 cup buttermilk, or 1 cup milk (240 ml) mixed with 1 teaspoon white vinegar
5 tablespoons unsalted butter, melted or olive oil
¾ cup turkey sausage, cooked
½ cup white onion, diced, caramelized
1 bell pepper, seeded and diced
⅓ cup sun-dried tomato, chopped
1 cup shredded mozzarella cheese
1 cup fresh spinach, chopped
¼ cup fresh basil, chopped
1 tablespoon italian seasoning

Steps:

  • Preheat the oven to 350˚F (180˚C). Grease a 12-cup muffin tin with nonstick spray.
  • Make the batter: In a large bowl, stir together the whole wheat flour, baking powder, baking soda, salt, pepper, and sugar. Set aside.
  • In a medium bowl, whisk together the eggs, buttermilk, and butter.
  • Add the turkey, onion, bell pepper, sun-dried tomatoes, mozzarella cheese, spinach, basil and Italian seasoning to the egg mixture and stir to combine.
  • Pour the egg mixture into the dry ingredients and fold to combine, being careful not to overmix the batter.
  • Using an ice cream scoop, divide the batter between the muffin cups, filling almost completely.
  • Bake for 18 minutes, rotating the muffin tin halfway through baking, until browned on top and a toothpick inserted in the center of a muffin comes out clean.
  • Let cool for 10 minutes before removing the muffins from the tin. Serve or store in the refrigerator for up to 5 days.

SAUSAGE AND GRAVY STUFFIN' MUFFINS RECIPE BY TASTY

Sausage And Gravy Stuffin' Muffins Recipe by Tasty image

Here's what you need: nonstick cooking spray, olive oil, breakfast sausage, McCormick® Rubbed Sage, red pepper flakes, kosher salt, Stuffin' Muffins Base, large eggs, McCormick® Turkey Gravy Mix, cold water

Provided by McCormick

Categories     Breakfast

Yield 12 servings

Number Of Ingredients 10

nonstick cooking spray, for greasing
1 tablespoon olive oil
1 lb breakfast sausage
½ teaspoon McCormick® Rubbed Sage
½ teaspoon red pepper flakes
kosher salt, to taste
1 batch Stuffin' Muffins Base
2 large eggs
1 oz McCormick® Turkey Gravy Mix
1 cup cold water

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
  • Heat the olive oil in a medium pan over medium heat. Add the breakfast sausage, McCormick® Rubbed Sage, and red pepper flakes and cook, breaking up the meat into small pieces, until browned and cooked through, 6-8 minutes. Pour off any excess grease, then season with salt to taste.
  • Add the sausage to the stuffing base and stir to combine. Fold in the eggs until incorporated.
  • Spoon about ¼ cup (60 G) of the stuffing into each muffin cup, filling just above the rims. Press down gently with a spoon to release any air pockets.
  • Bake the stuffing cups for 30-35 minutes, or until cooked through and the tops are browned. Let rest in the muffin tin for 20 minutes, then run a knife around the edges of each cup to release.
  • While the stuffing muffins cool, add the McCormick® Gravy Mix to a small saucepan. Pour in the water, whisking constantly to prevent lumps from forming. Turn the heat to medium and cook, stirring frequently, until the gravy comes to a boil. Reduce the heat to low and simmer for 1 minute. Remove the pot from the heat and let sit for 3-5 minutes, until slightly thickened.
  • Spoon the gravy over the sausage stuffin' muffins and serve warm.
  • Enjoy!

TURKEY SAUSAGE AND PEPPER SKILLET

Turkey Sausage and Pepper Skillet image

This easy and flavorful skillet recipe is one you'll want to put in your regular rotation. It's healthier than using pork sausage and makes for a quick weeknight dinner, and works well for meal-prepping. I like to serve mine over steamed rice.

Time 30m

Yield 4

Number Of Ingredients 8

2 tablespoons olive oil, divided
4 sweet Italian turkey sausage links (such as Jennie-O®)
1 large red onion, chopped
1 red bell pepper, cut into 1 1/2-inch chunks
1 green bell pepper, cut into 1 1/2-inch chunks
3 cloves garlic, minced
½ teaspoon crushed red pepper, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
  • Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
  • Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

Tips:

  • For a vegetarian version of this recipe, substitute crumbled tofu for the turkey sausage.
  • To make the muffins ahead of time, simply prepare the batter and muffin cups as directed, then cover and refrigerate overnight. In the morning, preheat the oven and bake the muffins according to the recipe instructions.
  • If you don't have muffin cups, you can use a 9x13 inch baking dish instead. Just be sure to grease the pan before adding the batter.
  • For a heartier muffin, add 1/2 cup of cooked rice or quinoa to the batter.
  • To add more flavor, try adding 1/4 cup of chopped sun-dried tomatoes or 1/4 cup of grated Parmesan cheese to the batter.
  • These muffins are also great for freezing. Simply wrap them individually in plastic wrap and place them in a freezer-safe bag. When you're ready to eat them, thaw them overnight in the refrigerator or reheat them in the microwave.

Conclusion:

Turkey Sausage and Pepper Muffins are a delicious and easy-to-make breakfast or brunch option. They're also great for packing in lunches or picnics. With a few simple tips, you can customize these muffins to your own taste preferences. So get creative and enjoy!
