1 cup long grain rice
1 tablespoon butter
1 tablespoon oil
2 tablespoons vermicelli or 2 tablespoons orzo pasta
1 1/2-2 cups hot water (explained below) or 1 1/2-2 cups chicken stock (explained below)
also you can add 1 cube of chicken bouillon to hot water
1 teaspoon salt

Steps:

  • Wash the rice several times with warm water and drain. Cover the rice with warm water and leave it for 15-20 minutes and drain. If you do not have time for this, just wash the rice and then drain.
  • Place the butter and oil in a saucepan or pot and add the vermicelli or orzo. Over low-heat, fry until their color starts changing to golden brown. Do not over fry, take the pot from the stove as soon as you see the golden brown color and add the rice. Then, again place the pot on the stove and stir for 3-4 minutes over medium heat.
  • Finally, add the hot chicken stock / water (If you leave the rice in water before cooking, use 1 ½ cup hot water otherwise use 2 cups). Add the salt and close the lid and cook over low heat, until the rice absorbs all the water. Meanwhile you can stir once or twice.
  • Let the pilaf stand for about 5-10 minutes before serving.
  • Pilaf goes well with any kind of dish.
  • P.S: You can also add 1 tsp of lemon juice with the water, to make the pilaf shine.

1/4 cup butter
1 cup diced green bell pepper
1 cup sliced mushrooms (about 4 oz.)
1 large tomatoes, cubed (about 1-1/4 cups)
1 cup uncooked long-grain rice or 1 cup uncooked whole grain rice
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) can condensed chicken broth
3/4 cup water

Steps:

  • In a medium-sized saucepan, melt the butter over medium-high heat. Add the green pepper and mushrooms and saute for 5 minutes. Add the remaining ingredients, stirring until blended. Bring to a boil, then reduce the heat to low. Simmer, covered, for 30 minutes or until all the liquid has evaporated.

2 oval eggplants (aubergines, 1 lb in all)
salt
1 large onion
1/3 cup olive oil (be sure to use a good one!)
2 cups tomatoes, peeled and chopped
1 1/2 teaspoons salt
fresh ground black pepper
2 tablespoons parsley, chopped
2 teaspoons of fresh mint, chopped
2 cups basmati rice
2 1/2 cups chicken stock
6 paper towels
yogurt, for serving (or Cucumber Salad With Yogurt (Middle East, Palestine) which is even better)

Steps:

  • Cut eggplants into large cubes with skin on. Place in a colander and sprinkle liberally with salt. Leave for 30 minutes.
  • Rince and dry eggplant with paper towels.
  • Half onion lengthwise and slice.
  • Heat 1/4 cup olive oil in a heavy pan and fry eggplant cubes until lightly browned. Remove and set aside.
  • Add the remaining oil and gently fry the onion until transparent. Add tomatoes, seasoning, herbs and fried eggplant. Bring to a boil.
  • Wash rice until the water runs clear. Drain and place on top of the eggplant mixture. Add chicken stock.
  • Bring to a boil without stirring. Reduce heat, cover pan and leave to simmer gently for 30 minutes.
  • Turn off heat, place a few paper towels over the rim of the pan and replace the lid (This is important don't ignore this part or your pilav won't be as fluffy!).
  • Stir gently and turn into a heated serving dish.
  • Serve with yogurt and then enjoy the delicious taste.

4 tablespoons olive oil
1 onion, finely chopped
2 large red bell peppers, seeded and finely chopped
2 cloves garlic, finely chopped
1 1/2 cups brown rice, raw (12oz)
1 teaspoon ground allspice
1 teaspoon ground cumin
2 teaspoons dried mint or 2 teaspoons dried basil
8 ounces cooked peeled shrimp, thawed if frozen
3 tablespoons currants
sea salt
ground black pepper
2 lemons, juice of
1/2 cup fresh parsley, finely chopped
salad greens, to serve with

Steps:

  • Heat the oil in a large nonstick fry pan.
  • Fry the onion, peppers and garlic over low heat for 10 minutes until softened but not browned.
  • Add the rice, spices and mint or basil.
  • Stir over the heat for 2 to 3 minutes, then add enough water to cover the rice.
  • Bring to a boil, lower the heat and simmer, uncovered for 10 to 15 minutes, or until rice is just tender, but still has a little bite to it.
  • Add the shrimp, currants and a little salt and pepper to taste.
  • Cook for about 4 minutes more, until the shrimp are heated through, then add the lemon juice and chopped parsley.
  • Serve pilaf warm or cold with salad greens.

6 c chicken broth
1 lb uncooked orzo
2 Tbsp unsalted butter
1 c green bell pepper, chopped
1 c green onions, sliced
2 clove garlic, minced
1 c fresh italian roma tomatoes, diced
2 1/4 oz - 1 small can sliced ripe black olives, drained
8 medium size fresh collard green leaves, stems removed
2 lb boneless pork loin chops or tenderloin, cut into 1 ½ -inch cubes
salt and ground black pepper, to season pork
1 medium fresh eggplant, cut into 1 ½ -inch cubes
2 to 3 medium fresh zucchini, cut into 1 ½ -inch cubes
2 medium fresh red bell peppers, cut into 1 ½ -inch cubes or pieces
2/3 c prepared oil based italian dressing
10 bamboo skewers, pre-soaked in water to prevent burning

Steps:

  • 1. 1.) Prepare Mediterranean orzo pilaf. Bring chicken broth to a boil in a large Dutch oven; stir in orzo. Reduce heat; simmer 5 minutes, stirring frequently. Remove from heat and cover. Melt 2 tablespoons unsalted butter in a medium skillet over medium heat. Add green bell peppers, green onions and garlic; sauté for 2 minutes. Remove from heat and set aside. Drain any excess broth from orzo. Combine orzo and buttered sautéed vegetable mixture into a 2-quart round casserole dish, fold in diced tomatoes and sliced black olives; set aside.
  • 2. 2.) Wash out Dutch oven clean, dry inside out completely to prepare Southern Tamale leaves. Fill Dutch oven to 2-inches from rim with hot water. Bring water to a rapid boil. Turn off heat and add collard leaves. Let sit for 3 - 5 minutes. Quickly remove leaves from water and place leaves flat along side each other onto a few layers of paper towels. Place a large spoonful of Mediterranean orzo pilaf mixture in the center of each collard leaf. Fold the ends over the pilaf mixture to form a sealed packed. Secure each with toothpick for added protection. Place tamales onto a plate; set aside. Reserve remaining Mediterranean orzo pilaf to serve later with completed meal.
  • 3. 3.) Prepare pork kabobs. Season all sides of pork with a little salt and ground black pepper. Tread seasoned pork, eggplant, zucchini and red bell peppers alternately on each of 10 bamboo skewers, leaving about 1-inch space free from tops of each skewer. Brush each lightly with Italian dressing. Heat coal or gas grill for medium heat level. Place kabobs on lower rack of grill along side each other. Cover and grill kabobs over medium heat 10 minutes, turning and brushing with Italian dressing every 2 minutes. Add tamales onto outer edge or upper rack of grill and cook, for an additional 5 minutes longer for kabobs, brushing kabobs with Italian dressing and turning tamales one time within 2 ½ minutes, or until pork is no longer pink and vegetables plus tamales are tender.
  • 4. 4.) To serve, place grilled kabobs and tamales onto serving platters, along side of Mediterranean orzo pilaf, or serve even portions of each onto 6 individual serving plates.

TURKISH WEDDING PILAF (DUGUN PILAV)

1 1/2 cups white basmati rice
2 tablespoons olive oil
3 cups meat stock (I sometimes use 3 cups chicken stock instead)
1/4 cup pine nuts
salt

Steps:

  • Wash rice until water runs clear.
  • Drain well.
  • Heat olive oil in a pan and add drained basmati and pine nuts.
  • Stir over medium heat for 5 minutes.
  • Add stock and salt to taste.
  • Check until boiling then reduce heat, cover and simmer 15 minutes and check to gauge when cooked.
  • Turn off heat, place paper towels over rim of pan and replace lid tightly.
  • Leave at least 10 minutes before removing lid. May be left up to 30 minutes without spoiling, depending of course on the quality of the grain.
  • Fluff with fork and serve, or spoon into an oiled mould, press firmly and unmould onto serving dish.
