Number Of Ingredients 13

2 tablespoons olive oil
½ onion, diced
1 clove garlic, minced
¼ cup diced tomatoes, drained
5 cups chicken stock
½ cup red lentils
¼ cup fine bulgur
¼ cup rice
2 tablespoons tomato paste
1 teaspoon paprika
½ teaspoon cayenne pepper
1 tablespoon dried mint
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large pot over high heat. Cook and stir the onion in the hot oil until it begins to soften, about 2 minutes. Stir the garlic into the onion and cook another 2 minutes. Add the diced tomatoes to the onion mixture; continue to cook and stir another 10 minutes.
  • Pour in the chicken stock, red lentils, bulgur, rice, tomato paste, paprika, cayenne pepper, and mint to the tomato mixture; season with salt and black pepper. Bring the soup to a boil, reduce heat to medium-low, and cook at a simmer until the the lentils and rice are cooked through, about 30 minutes.
  • Pour the soup into a blender to no more than half full. Firmly hold the lid in place and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth; pour into your serving dish. Alternately, you can use a stick blender and puree the soup in cooking pot.

This delicious red lentil soup is super easy to make and full of flavor. It's vegan as well -- win/win! My dad combined a few different recipes over the years and this one was decidedly the winner. It's been made by many people throughout the family and is always met with great compliments! Cannot emphasize enough that you really need to use red lentils for this recipe as it's key to the taste. If you can't find them in your regular grocery store, they are always in stock at the nearest Indian food market. Best served with your favorite freshly baked bread!

TURKISH RED LENTIL SOUP (KIRMIZI MERCIMEK ÇORBASI)

Turkish Red Lentil Soup (Kirmizi Mercimek Çorbasi) image

This is true comfort food that tastes like a cross between Cream of Wheat and Lentil Soup. Try to get the red lentils because they cook quicker and lend a lovely orangy color to the finished soup (the lentils cook to a yellow, but the tomatoes make it orange). This soup is usually served before a meal with a dollop of yogurt or tzatiki sauce swirled in.

TURKISH RED LENTIL SOUP

Categories     Soup/Stew     Sauté     Vegetarian     Quick & Easy     High Fiber     Winter     Healthy

Yield 4-6 people

Number Of Ingredients 14

3 tablespoons butter
1 white onion, finely diced
1 red bell pepper, finely diced
2½ tablespoons tomato paste
1 tablespoon freshly ground cumin seeds
1 ½ cups red lentils, rinsed and drained
8 cups water
Salt
¼ cup fine ground bulgur
1 tablespoon dried mint
2 teaspoons red pepper flakes, preferably Aleppo or Maras pepper
2 teaspoons sumac (optional)
¼ cup Greek yogurt
¼ cup pomegranate seeds

Steps:

  • 1. Melt 1 tablespoon butter in a medium pot over medium heat. Add onion and bell pepper. Sauté until softened, about 5 minutes. Stir in tomato paste and cumin, and toast until aromatic, 2-3 minutes. 2. Stir in lentils and water, increase heat to high and bring to a boil. Reduce heat to medium, season with salt and simmer until lentils are tender, 10-15 minutes. Add bulgur and simmer until grains increase in volume and tenderize, about 8 minutes more. (Soup should have the consistency of porridge.) Stir in remaining butter, mint, red pepper flakes and sumac, if using. Once butter melts, season to taste with salt. Ladle soup into bowls and top each serving with a dollop of yogurt and sprinkle of pomegranate seeds.

Tips:

  • Use high-quality red lentils. Look for lentils that are whole and free of debris. Split red lentils are the most common type used in Turkish red lentil soup, but you can also use whole red lentils.
  • Rinse the lentils well before cooking. This will help to remove any dirt or debris.
  • Use a large pot to cook the soup. This will give the lentils plenty of room to expand as they cook.
  • Bring the soup to a boil, then reduce heat and simmer. This will help to prevent the lentils from overcooking and becoming mushy.
  • Add the spices and herbs at the end of cooking. This will help to preserve their flavor.
  • Serve the soup with a dollop of yogurt and a sprinkle of paprika. This will add a delicious creamy tang and smokiness to the soup.

Conclusion:

Turkish red lentil soup is a delicious, hearty, and healthy soup that is perfect for a cold winter day. It is also a very affordable and easy-to-make soup, which makes it a great option for busy weeknights. With its vibrant red color and flavorful broth, this soup is sure to be a hit with your family and friends. So next time you're looking for a comforting and delicious soup, give Turkish red lentil soup a try!
