Time 25m

Yield 6 serving(s)

Number Of Ingredients 15

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
2 celery ribs, chopped
3 carrots, peeled and sliced
1 (14 ounce) can chicken broth
1 (28 ounce) can diced tomatoes
1/2 cup small elbow macaroni
2 tablespoons fresh parsley, chopped
2 teaspoons dried basil
1 (15 ounce) can cannellini beans, rinsed and drained
12 ounces fresh spinach
1/2 teaspoon salt
1/2 teaspoon black pepper
grated parmesan cheese, to top

Steps:

  • In a large soup pot, heat oil over medium heat. Add onion, garlic, celery and carrots. Cook, stirring often, until onion is softened; 5-6 minutes.
  • Mix in broth, tomatoes, macaroni, parsley, basil, beans, spinach, salt and pepper.
  • Heat to boiling then reduce heat to low and simmer for 15 minutes or until the macaroni is tender.
  • Serve topped with Parmesan cheese.

Tips:

  • Use fresh ingredients: Fresh vegetables, herbs, and beans will give your soup the best flavor. If you can, buy organic ingredients to avoid pesticides and herbicides.
  • Don't skimp on the olive oil: Olive oil is a key ingredient in Tuscan cooking, and it adds a rich, flavorful base to this soup. Use a good-quality extra-virgin olive oil for the best results.
  • Season your soup well: Salt, pepper, and garlic are essential seasonings for this soup. You can also add other herbs and spices to taste, such as rosemary, thyme, or red pepper flakes.
  • Cook the soup low and slow: This will allow the flavors to develop and deepen. Simmer the soup for at least 30 minutes, or up to an hour.
  • Serve the soup with crusty bread or crackers: This will help to soak up the delicious broth. You can also garnish the soup with grated Parmesan cheese or a drizzle of olive oil.

Conclusion:

Tuscan spinach bean soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a relatively inexpensive and easy soup to make. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
